This shortcrust pastry recipe is a breeze to make in the Thermomix®! I've been using this method for years, and it always turns out perfectly flaky and tender. Ingredients (5 ingredients)

  • 1.5 cups all-purpose flour
  • 5 tbsp shortening, chilled and cubed
  • 4 tbsp unsalted butter, chilled and cubed
  • 0.5 tsp salt
  • 3 tbsp ice water

Combine dry ingredients and fats

Add 1 ½ cups all-purpose flour, 5 tablespoons chilled and cubed shortening, 4 tablespoons chilled and cubed unsalted butter, and ½ teaspoon salt to the Thermomix bowl. Pulse 3 times for 3 seconds each on Stufe 4 to lightly mix the ingredients.

Add ice water

With the Thermomix running on Stufe 4, slowly pour in 3 tablespoons of ice water until the dough just starts to become crumbly. Be careful not to overmix.

Form dough and chill

Transfer the crumbly dough to a bowl and form it into a ball with your hands, squeezing it a bit to make it stick together. If it's too dry, add a tiny bit more ice water. Wrap the dough in wax paper or plastic wrap and chill in the refrigerator for at least 30 minutes before using.
