Description

These mussel croquettes are a delicious and creamy bite, perfect for any occasion. The recipe is simple, although it requires a bit of patience, but the result is worth it. Fresh mussels give it an intense sea flavor, which is balanced with the smoothness of the béchamel. I often prepare them for family parties and they are always a success. They can be served as an appetizer or as a starter, accompanied by a homemade alioli sauce. A dish that will transport you to the Mediterranean coast!

  • 1 kilogramo mussels
  • 1 piece onion
  • 40 gramos wheat flour
  • 50 gramos butter
  • 350 mililitros milk
  • 1 container mussel water
  • 2 piece eggs
  • 250 gramos breadcrumbs
  • 1 container oil

Clean and Cook the Mussels

Clean 1 kilogram of mussels, discarding the ones that are bad or open. Place them in the Varoma container with 1 glass of water in the bowl. Steam for 15 Min./Varoma/Stufe 1. When you see that they are open, remove from the heat.

Reserve the Meat and Broth

Let the mussels temper, remove the meat and set aside. Strain the cooking water and save it, as you will use it to make the croquettes more flavorful. Reserve 1 glass of the cooking broth.

Chop the Mussels

With the help of scissors, cut the mussels into small pieces. Reserve.

Chop the Onion

Chop 1 onion into quarters and place it in the bowl. Chop 3 Seg./Stufe 5. With the spatula, lower the remains from the walls of the bowl.

Add 50 grams of butter to the bowl and sauté 5 Min./120°C/Stufe 1.

Add the Chopped Mussels

Add the chopped mussels to the bowl and mix 5 Seg./Stufe 3/Linkslauf.

Incorporate the Flour

Add 40 grams of wheat flour to the bowl and program 2 Min./100°C/Stufe 2.

Add the Mussel Broth

Pour 150 milliliters of cooking water from the mussels into the bowl little by little, mixing 30 Seg./Stufe 4.

Add the Milk

Add 350 milliliters of milk little by little to the bowl and program 8 Min./90°C/Stufe 4. We mix without stopping stirring until a béchamel is formed. At this point, test for salt and rectify if necessary, although the mussel already has a lot of flavor.

Cool the Dough

Remove the dough from the bowl and put it in a source to cool. Once cold, put it in the fridge for a while, so it will compact a bit and you can better form the mussel croquettes. It can be left from one day to the next.

Form the Croquettes

Beat 2 eggs in a bowl and in another put 250 grams of breadcrumbs. Remove the dough from the fridge and form elongated balls to pass them first through the egg and then through the breadcrumbs.

Fry the Croquettes

Put a pan on the fire with 1 glass of oil and, when the oil is very hot, fry the homemade mussel croquettes in batches so that they do not stick together. Turn them over if necessary so that they brown on all sides.

Drain the Oil

As you take them out of the pan, place them on a plate with kitchen paper to absorb the oil that it releases.
