Description

These apricot pancakes are a real eye-catcher on the breakfast table! The apricot halves, which look like fried eggs, make them a fun highlight for young and old. I especially like to make them in the summer when the apricots are nice and juicy. The dough is quickly prepared in the Thermomix® and the pancakes are baked in no time. They taste slightly sweet and fruity - simply delicious! If you like, you can add some cinnamon to the dough. A great recipe for a relaxed Sunday brunch or as a sweet surprise for a birthday.

Ingredients (8 ingredients)

  • 475 g Apricot halved fruits (canned)
  • 4 piece Eggs (M)
  • 220 ml Milk
  • 200 g Salt
  • 1 tsp Cream of tartar baking powder
  • 50 g Sugar
  • 80 g Sunflower oil
  • 60 g Icing sugar

Preparation (8 steps)

Prepare apricots

Drain the apricots from the can and let them drain well. Then halve and set aside.

Separate eggs

Separate the eggs. The egg white will be beaten until stiff later, the egg yolk goes into the dough.

Prepare egg yolk mixture

Thermomix® Setting

Put the egg yolk, milk and a pinch of salt in the mixing bowl and mix for 10 sec./speed 3.

Prepare dough

Thermomix® Setting
20 sec/Speed 4

Add flour and baking powder and stir in for 20 sec./speed 4.

Beat egg whites

Thermomix® Setting
3 min/Speed 3.5

Insert the butterfly. Put egg white in the mixing bowl and beat for 3 min./speed 3.5 until stiff. Gradually sprinkle in the sugar through the lid opening.

Fold in egg whites

Remove the butterfly. Carefully fold the egg whites into the dough in several portions with a spatula.

Bake pancakes

Heat 1-2 tablespoons of oil in a coated pan. Add 2 tablespoons of dough per pancake to the pan and bake over low to medium heat for 3-4 minutes until golden brown on the bottom. Then press 1 apricot half into the dough, turn the pancakes and bake for another 3-4 minutes. Prepare the remaining pancakes in the same way.

Serve

Dust the apricot pancakes with a little icing sugar and serve warm.
