Description

About this recipe

Adzhika, this fiery spice paste, has its roots in Abkhazian cuisine, a region in the Caucasus. There it is much more than just a dip, it is an integral part of the food culture and is traditionally ground with stones. My first encounter with Adzhika was at a small market in Georgia, where an elderly lady was selling her homemade paste in small jars. The intense scent and vibrant color immediately captivated me. The list of ingredients for our Thermomix® version is deliberately kept simple in order to preserve the authentic taste. The peppers form the base and provide sweetness and volume. I recommend using red peppers as they have a more intense color and a fuller flavor. The pepperoni brings the spiciness into play. Here you can vary depending on the desired degree of spiciness. For a mild version, use a mild pepperoni or remove the seeds. Garlic is an essential ingredient and gives the paste its characteristic spice. The tomato provides a slight acidity and juiciness. The salt serves not only as a flavor enhancer, but also as a preservative. The preparation in the Thermomix® is very simple and quick. Make sure to cut the peppers into coarse pieces so that the Thermomix® can chop them evenly. The pepperoni should also be roughly chopped. When chopping the ingredients, it is important not to choose the level too high, otherwise the paste will become too fine. Level 8 is ideal to obtain a slightly chunky consistency. After adding the salt, it is sufficient to mix the paste briefly to ensure that the salt is evenly distributed. Adzhika is naturally vegan and vegetarian. For an even more intense flavor, you can add fresh herbs such as coriander or parsley. Dried spices such as smoked paprika powder, cumin or coriander seeds also go perfectly with it. If you like it a little milder, you can add a dash of olive oil. Adzhika is incredibly versatile. It is ideal as a dip for bread, crackers or vegetable sticks. But it can also be used as a marinade for meat or vegetables. A dollop of Adzhika on grilled cheese or a fried egg is a real treat. In soups and stews, it provides a pleasant spiciness and seasoning. The finished Adzhika should be filled into clean, airtight jars or cans. It can be kept in the refrigerator for several weeks without any problems. You can also freeze the Adzhika in portions to make it last longer. This way you always have a hot spice mix at hand. The paste can also be prepared well in advance, as it gains even more flavor in the refrigerator.
