  • 1 tsp Sugar
  • 200 g Wheat flour Type 405
  • 1 tbsp Butter
  • 1 pinch Salt
  • 2 Eggs
  • 3 tbsp Rapeseed oil
  • 1.5 Lemons
  • 1 can Chickpeas (265 g drained weight)
  • 2 clove Garlic
  • 2.5 tsp Tahini Paste
  • 3 tbsp Olive oil
  • Cumin (ground)
  • Paprika powder
  • 3 Zucchini
  • 1 piece Cheese (0.5 cm thick)
  • 1 tbsp pink Peppercorns

Preparation (11 steps)

Heat milk and prepare yeast

Put 200 ml milk into the mixing bowl and heat for 2 min./37°C/speed 1. Crumble 10 g yeast and add to the mixing bowl together with 1 tsp sugar and 2 tbsp wheat flour type 405. Stir for 10 sec./speed 3.

Let the yeast mixture rise

Cover the mixing bowl and let the yeast mixture rise in a warm place for 15 minutes.

Prepare dough

Thermomix® Setting
2 min/122°F/Speed 1, 2 min/Kneading speed 50

Put 1 tbsp butter in the mixing bowl and melt for 2 min./50°C/speed 1. Add 180 g wheat flour type 405, 1 pinch of salt and 2 eggs to the yeast milk and knead for 2 min./kneading level to a smooth dough.

Let the dough rise

Cover the dough in the mixing bowl and let it rise again for 20 minutes.

Bake blinis

Heat 2 tbsp rapeseed oil in a coated pan. Add 1 tbsp dough per blini to the pan and fry on both sides until golden brown over medium heat. Set the finished blinis aside.

Prepare hummus

Squeeze out 1.5 lemons. Drain 1 can of chickpeas (265 g drained weight). Peel 1 clove of garlic and put it in the mixing bowl. Chop for 3 sec./speed 7. Add chickpeas, 3 tbsp olive oil, lemon juice and 2.5 tsp tahini paste and puree for 30 sec./speed 8. Season with salt, cumin and paprika and stir for another 10 sec./speed 3.

Spread blinis with hummus

Spread the prepared hummus on the blinis.

Prepare zucchini

Wash 3 zucchini, dry them and cut them into thin strips with a peeler. Peel 1 clove of garlic and put it in the mixing bowl. Chop for 3 sec./speed 7.

Sweat zucchini

Thermomix® Setting
3 min/248°F/Speed 1, 3 min/212°F/Linkslauf Speed 1 120 Reverse

Add 1 tbsp rapeseed oil to the mixing bowl and heat for 3 min./120°C/speed 1. Add the zucchini slices and the chopped garlic and sweat for 3 min./100°C/reverse rotation speed 1. Season with salt.

Form zucchini trees

Put the zucchini strips together to form a fir tree that is thicker at the bottom and thinner at the top. Attach to the blinis with toothpicks.

Cut out cheese stars and decorate

Cut out stars from 1 piece of cheese (0.5 cm thick) with a cookie cutter and place them on the toothpicks as fir tree tops. Garnish with 1 tbsp pink peppercorns.

The idea for these savory blini fir trees came to me on a cold December evening when I was looking for an original finger food for a small Christmas party. I wanted something that not only tasted good, but also looked good and reflected the festive mood. Blinis, the small Russian pancakes, seemed to me to be a perfect base to conjure up small, edible Christmas trees from them. The ingredients play a crucial role. The milk and yeast ensure a loose and fluffy dough. The flour gives the whole thing structure, while the butter contributes to a fine taste. The eggs bind the ingredients and give the blinis a beautiful golden brown color when baked. The hummus, prepared from chickpeas, tahini, lemon juice, garlic and olive oil, serves as a creamy base and brings an oriental note to the game. Cumin and paprika provide the necessary seasoning. The zucchini strips, shaved wafer-thin, form the "green" of the fir trees and bring a fresh, crispy component into play. The cheese, cut out as small stars, serves as a festive tip and brings a salty contrast to the sweetish hummus. The pink peppercorns are the icing on the cake and provide a slightly peppery kick. When preparing with the Thermomix®, it is important to pay close attention to the temperature of the milk so that the yeast can work optimally. The dough should have enough time to rise so that it becomes nice and airy. Patience is required when baking the blinis. The heat should not be too high so that they do not burn, but become evenly golden brown. The hummus can be wonderfully pureed creamy in the Thermomix®. Make sure to drain the chickpeas well so that the hummus does not become too liquid. For a vegetarian version, you can cut out carrot or pepper stars instead of the cheese stars. For a vegan version, replace the milk with plant milk (e.g. soy or almond milk), the butter with margarine and the eggs with an egg substitute (e.g. apple sauce or linseed flour). You can experiment with different spices for the hummus. Smoked paprika, chili or roasted sesame seeds go perfectly. Serve the blini fir trees as an appetizer or finger food on a festively set table. They go well with a glass of sparkling wine or a light white wine. You can serve a fresh salad or a few olives as a side dish. The finished blini fir trees are best served fresh, as the zucchini strips can otherwise become a little soft. However, you can also prepare the blinis and the hummus and store them separately. You should only plane and sweat the zucchini strips shortly before serving. This is how they stay crisp and fresh. You can store the blinis in an airtight container in the refrigerator. The hummus will also keep in the refrigerator for a few days.
