Description

Chicken wings with basil are a tasty and fragrant main course, perfect for a family dinner or Sunday lunch. The tender and juicy meat, flavored with fresh basil and white wine, goes perfectly with the sausage, creating an irresistible combination of flavors. I prepare them often, especially in the summer when the basil in my garden is at its peak. The preparation is simple and quick, but the slow cooking allows the flavors to blend together perfectly. A dish that always wins everyone over!

Ingredients (9 ingredients)

  • 1000 g Chicken wings
  • 200 g Onions
  • 200 g Pork sausage
  • 20 g Basil
  • 200 ml Meat broth
  • 100 ml White wine
  • 40 ml Extra virgin olive oil
  • 30 g Flour
  • 1 pinch Salt

Preparation (10 steps)

Preparation of the chicken wings

Flame the chicken wings to remove any remaining feathers, wash them carefully, dry them with kitchen paper and lightly flour them. Set aside.

Preparation of the onions

Insert 200g of onions cut into pieces into the bowl and chop for 3 Sec./Level 5. With the help of the spatula, collect the chopped mixture on the bottom of the bowl.

Sauté the onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 40 ml of extra virgin olive oil to the bowl with the chopped onions and sauté for 3 Min./120°C/Level 1.

Brown the chicken wings

In a large pan, brown the floured chicken wings in extra virgin olive oil for about 5 minutes per side, until golden brown. Remove the wings from the pan and set aside.

Addition of sausage and basil

Cut 200g of pork sausage into slices. Chop 20g of fresh basil leaves. Add the sausage and basil to the bowl with the sautéed onions.

Sauté sausage and basil

Thermomix® Setting
2 min/248°F/Speed 1 120

Sauté the sausage and basil in the bowl for 2 Min./120°C/Level 1.

Addition of wine and broth

Thermomix® Setting
3 min/Varoma/Speed 1 Varoma

Add 100 ml of white wine to the bowl and cook for 3 Min./Varoma/Level 1 without the measuring cup, to evaporate the alcohol.

Slow cooking

Thermomix® Setting
45 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the browned chicken wings and 200 ml of hot meat broth to the bowl. Cook for 45 Min./100°C/Level 1/Reverse rotation.

Adjust salt

Thermomix® Setting
5 min/212°F/Speed 1/Linkslauf 100 Reverse

Taste and adjust salt to taste. Cook for another 5 Min./100°C/Level 1/Reverse rotation, if necessary, to thicken the sauce.

Serve

Arrange the chicken wings on a hot serving dish and serve immediately.
