Description

This Andalusian gazpacho is an explosion of fresh and summery flavor. Prepared in the blink of an eye with the Thermomix®, it is ideal as a light starter or a refreshing lunch. The combination of ripe tomatoes, cucumber, pepper and a touch of apple cider vinegar makes it a delicious and nutritious cold soup. To give it a crunchy touch, we add dehydrated ham and some croutons. A perfect dish to enjoy on hot days! In addition, it is a very versatile recipe that can be adapted to your tastes, adding or removing ingredients. Go ahead and try it!

Ingredients (11 ingredients)

  • 6 piece ripe tomatoes
  • 1 piece spring onion
  • 1 piece cucumber
  • 1 clove garlic
  • 1 piece small red pepper
  • 6 cucharadas olive oil
  • 3 cucharadas apple cider vinegar
  • 2 cucharitassal salt
  • 1 toque pepper
  • 1 pack ham to make it crispy
  • 1 bolsa croutons

Crush the vegetables

Add the ripe tomatoes, cucumber, spring onion, garlic clove and small red pepper to the Thermomix glass. Crush for 30 seconds at speed 10.

Add oil, vinegar, salt and pepper

Add the olive oil, apple cider vinegar, salt and pepper to the Thermomix glass. Mix for 1 minute at speed 4.

Serve and garnish

Serve the gazpacho cold. Garnish with the crispy ham, croutons and the chopped green part of the spring onion stalk.
