Description

Caramelized nut corners are a festive pastry from the Thermomix® with flour, butter, sugar and apricot jam. Preparation in the Thermomix® takes a total of 95 minutes, including 35 minutes of active work. The recipe makes one serving and is ideal as finger food or dessert, especially during the Christmas season. The nuts and caramel flavor make it a special treat for anyone who loves sweet cookies.

Ingredients (14 ingredients)

  • 300 g Flour
  • 1 TL Baking powder
  • 130 g Sugar
  • 1 Pck. Vanilla sugar
  • 2 Egg(s)
  • 130 g Butter, soft
  • Fat and flour for the baking sheet
  • 6 EL Apricot jam
  • 200 g Butter
  • 5 EL Water or rum
  • 200 g Sugar, brown
  • 1 Pck. Vanilla sugar
  • 400 g Hazelnuts, ground or walnuts or almonds
  • 200 g Chocolate glaze

Prepare shortcrust pastry

Put 300 g flour, 1 tsp baking powder, 130 g sugar, 1 pack vanilla sugar, 2 eggs and 130 g soft butter into the mixing bowl and process for 2 min/kneading stage to form a dough.

Prepare baking sheet and spread dough

Butter the bottom of a drip tray and dust with flour. Alternatively, place a baking frame in the baking sheet. Spread the dough evenly on the baking sheet with your hands.

Spread jam

Spread 6 tablespoons of apricot jam thinly on the dough base.

Prepare nut mixture

5 min/176°F/Speed 2 80

Put 200 g butter, 5 tbsp water or rum, 200 g brown sugar and 1 pack vanilla sugar into the mixing bowl and heat for 5 min/80°C/speed 2 until the sugar has dissolved. Use a spatula to push the ingredients down from the edge.

Complete nut mixture

Thermomix® Setting
20 sec/Speed 3

Add 400 g ground hazelnuts, walnuts or almonds and stir in for 20 sec/speed 3. Use a spatula to push the ingredients down from the edge.

Spread nut mixture

Spread the nut mixture evenly on the jam.

Bake nut corners

Bake in a preheated oven at 175 °C top/bottom heat for approx. 30 - 35 minutes (on the middle rack).

Cool and cut nut corners

Let cool on the baking sheet, preferably overnight, and cut into corners the next day.

Glaze nut corners

Either dip only the tips or the sides in 200 g chocolate glaze. The chocolate glaze can be melted in a water bath or in the microwave.
