Description

This apple milk rice casserole from the Thermomix® is a vegetarian dessert with apples, milk rice and whole milk as the main ingredients. Preparation takes about 85 minutes, of which 20 minutes are active work time. The recipe yields 6 servings and is suitable as a main course or sweet meal for the whole family.   • 900 ml Whole milk
  • 300 g Apples
  • 200 g Milk rice
  • 100 g Cream
  • 30 g Sugar
  • 2 packet Bourbon vanilla sugar
  • 1 pinch Salt
  • 40 g Raisins

Preparation (6 steps)

Preheat oven

Preheat the oven to 180°C convection. Alternatively, top/bottom heat 200°C.

Prepare apples

Peel, quarter, core and cut 300 g apples into approx. 2 cm cubes.

Mix ingredients

Place the apple pieces, 30 g sugar, 2 packets of vanilla sugar, 1 pinch of salt and 40 g raisins (optional) in an ovenproof casserole dish. Add 200 g uncooked milk rice, 900 ml whole milk and 100 g cream and mix everything well.

Bake casserole

Cover the casserole dish with a suitable lid, aluminum foil or other tightly closing cover and bake on the middle rack in the preheated oven for 75 minutes.

Resting time

After the baking time, stir the milk rice casserole well or let it rest in the switched-off oven for another 10 minutes so that any milk that is still on the bottom is absorbed.

Serve

Serve the casserole with cinnamon sugar as desired.

About this recipe

The apple milk rice casserole is a reminder of my childhood for me. My grandma often baked it, especially in the fall when the apples from her own garden were ripe. The scent of apples, vanilla and warm milk that then spread throughout the house is unforgettable. I have adapted her recipe a little over the years to make it easier to prepare with the Thermomix®, but the basic taste has remained the same. The ingredients all play an important role in the success of the casserole. The whole milk forms the base and ensures the creamy consistency. It is best to use fresh whole milk with a high fat content, as this significantly improves the taste. The milk rice, ideally round grain rice, swells during baking and combines with the milk to form a creamy mass. The apples, in this case sour varieties such as Boskoop or Elstar, bring a fruity note and a pleasant contrast to the sweetness of the milk rice. The sugar and Bourbon vanilla sugar provide the sweetness and the fine vanilla aroma. A pinch of salt enhances the aromas and balances the sweetness. The raisins are optional, but I think they go perfectly with apples and milk rice. They bring an extra sweetness and a slightly chewy texture to the casserole. The preparation in the Thermomix® makes mixing the ingredients much easier. Although the casserole itself is baked in the oven, preparing the ingredients is much faster in the Thermomix®. You can of course also chop the apples with the Thermomix®, but I prefer to cut them by hand in order to maintain control over the size of the cubes. Make sure to close the casserole dish well so that the milk rice does not dry out. Aluminum foil is a good alternative if you don't have a suitable lid. The recipe is already suitable for a vegetarian version. For a vegan version, you can replace the whole milk and cream with plant-based alternatives such as almond milk or oat milk and vegan cream. Feel free to experiment with other spices as well. Cinnamon, cardamom or a pinch of nutmeg go perfectly with apples and milk rice. Serve the apple milk rice casserole warm, preferably straight from the oven. Sprinkle it with cinnamon and sugar as desired. A scoop of vanilla ice cream or a dollop of whipped cream also go perfectly with it. If you like it fruitier, you can serve the casserole with applesauce or fresh apple slices. The apple milk rice casserole can be prepared well in advance. You can mix the ingredients the day before and store them in the casserole dish in the refrigerator. Before baking, you should let the casserole stand at room temperature for about 30 minutes. You can store leftovers in the refrigerator and heat them up within 2-3 days.
