Description

This apple tart with butter aroma is a real treat and reminiscent of cozy autumn days. I especially like to bake it when the apples come from my own garden. The puff pastry provides a crispy base, while the apples with the butter and sugar develop a delicious caramel note. The preparation is very simple and can be done in no time with the Thermomix®. Perfect for Sunday coffee or as a sweet surprise for friends and family. If you like, you can sprinkle the tart with some icing sugar.

  • 1 pack Butter puff pastry (round, 280 g, refrigerated section)
  • 1.2 kg Apples
  • 50 g Butter
  • 50 g Cane sugar
  • Icing sugar for dusting

Prepare apples

Peel, quarter, remove core and cut the apples into thin slices. Set aside the prepared apple slices.

Melt butter

Cover tart

Unroll the puff pastry and place it on a baking tray with the baking paper. Arrange apple slices evenly on the dough, leaving a border of about 1 cm. Spread the melted butter on the apple slices with a brush and sprinkle with 50 g of cane sugar.

Bake tart

Bake the prepared tart in the preheated oven (electric oven: 200 °C / fan oven: 180 °C) for approx. 20 minutes until golden brown. After baking, let it cool briefly and dust with icing sugar as desired.

About this recipe

This apple tart with butter aroma is more than just a recipe for me; it is a memory of my childhood. My grandmother had a huge apple tree in the garden, and in autumn the whole house smelled of apples, cinnamon and freshly baked cake. This tart is my homage to that time. The butter puff pastry forms the crispy base. Make sure to use puff pastry from the refrigerated section that is made with butter. The difference in taste is enormous! It should not be rolled out too thinly so that it does not soak through during baking. The apples are, of course, the star of the tart. I prefer a tart variety such as Boskoop or Elstar, as they provide a nice contrast to the sweetness of the sugar and butter. The butter provides a rich, caramel-like note and keeps the apples juicy. I use cane sugar because it has a slightly deeper, maltier taste than conventional sugar. The preparation with the Thermomix® is really child's play. Melting the butter in the mixing bowl is a breeze and saves time. Make sure to distribute the apples evenly on the puff pastry and leave a small edge free, as the dough will rise a little during baking. The baking time may vary depending on the oven, so keep an eye on the tart. It should be golden brown and the apples soft. The recipe is already suitable for a vegetarian version. If you prefer a vegan version, you can replace the butter puff pastry with a vegan puff pastry and the butter with a vegetable margarine. Feel free to experiment with spices! A pinch of cinnamon, cardamom or nutmeg goes perfectly with apples. Also, a few drops of lemon juice drizzled over the apples will prevent browning and give a fresh note. Serve the apple tart lukewarm with a scoop of vanilla ice cream or a dollop of whipped cream. A cup of coffee or tea also goes wonderfully with it. For a special occasion, you can garnish the tart with caramelized nuts or almond slivers. The apple tart tastes best freshly baked. But it can also be prepared well in advance. You can peel and cut the apples the day before and store them in lemon water to prevent them from browning. The baked tart can be kept in the refrigerator for 2-3 days. Before serving, you can briefly warm it up in the oven.
