Description

These aromatic garlic noodles are an absolute quick dish! Perfect when you need something fast and you're very hungry. The spaghetti is refined with a simple but incredibly delicious sauce made from garlic, onions and butter. Rosemary and thyme provide that certain something. A touch of salt and pepper rounds the whole thing off. If you like, you can sprinkle some grated cheese on top. An ideal dish for students or anyone who has little time to cook. Vegetarian and super easy!

  • 2 clove Garlic
  • 0.5 piece Onion
  • 40 g Butter
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 pinch Rosemary
  • 1 pinch Thyme

Chop onion and garlic

About this recipe

For me, these garlic noodles are more than just a quick dish; they are a reminder of my student days. Back then, the budget was tight and time was even tighter, but I still didn't want to compromise on good taste. This recipe is a further development of the classic Aglio e Olio, adapted to the possibilities and speed of the Thermomix®. The ingredients are deliberately kept simple, but each one plays an important role. The spaghetti, preferably made from durum wheat semolina, forms the basis. They should be cooked "al dente" to maintain the perfect bite. The garlic, of course, is the star of the dish. Two cloves are enough for a pleasant aroma, but if you like it more intense, you can add a third. The half onion provides a slight sweetness and rounds off the taste. The butter is not only a flavor carrier, but also important for the creamy texture of the sauce. Salt and pepper are the obligatory flavor enhancers, while rosemary and thyme bring in a Mediterranean note and refine the dish. The preparation in the Thermomix® is very simple. First, the onion and garlic are chopped. Here it is important to adhere exactly to the time and level so that the ingredients do not become mush. Then they are sautéed in butter. The temperature of 120°C is ideal to develop the aromas without burning the butter. After sautéing, the spices are added. The reverse is crucial when the noodles are tossed in, as it prevents them from being chopped. Make sure the noodles are well drained before adding them to the mixing bowl, otherwise the sauce will be too watery. The recipe is already perfect for a vegetarian version. If you want to make it vegan, simply replace the butter with olive oil. You can also vary the spices. Chili flakes add a pleasant spiciness, while parsley or oregano add a fresh note. If you like it a little more decadent, you can sprinkle some grated Parmesan or Pecorino over it at the end. Serve the garlic noodles immediately after preparation. They go perfectly as a side dish to a salad or a grilled piece of meat or fish. A glass of dry white wine rounds off the dish perfectly. The garlic noodles are not ideal for storing, as the noodles quickly lose their taste and texture. If there is anything left over, it should be stored in the refrigerator and consumed within one to two days. It is best to add some olive oil to warm it up to make it juicier again. You can prepare the onion-garlic mixture and store it in the refrigerator. This makes it even faster.
