Description

This Thermomix® recipe for baked potatoes with chanterelles is a hearty and simple main course with potatoes, fresh chanterelles, and onions. Refined with cream and cheese, it is a vegetarian dish for the whole family. The preparation time is 55 minutes, of which 25 minutes are active working time. The recipe is designed for 4 servings and is ideal for autumn/fall cuisine.

  • 1 kg Potatoes, predominantly waxy
  • 500 g Chanterelles
  • 2 Zwiebeln Onions
  • 200 ml Cream
  • 150 g Grated cheese
  • 2 EL Oil
  • 1 Prise Salt
  • 1 Prise Pepper
  • 1 Prise Nutmeg
  • 1 Bund Parsley, chopped
  • 1 TL Vegetable broth powder

Chop onions

Peel and quarter the onions and put them in the mixing bowl. Chop for 3 sec./speed 5.

Sauté onions

Add oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add chanterelles

Thermomix® Setting

Clean the chanterelles, cut them into smaller pieces if necessary, and add them to the mixing bowl together with the vegetable broth powder. Sauté for 5 min./100°C/Reverse speed/speed 1.

Add cream and spices

Add cream, salt, pepper, nutmeg, and chopped parsley to the mixing bowl and simmer for 5 min./90°C/Reverse speed/speed 1.

Prepare baked potatoes

Preheat the oven to 200°C top/bottom heat. Peel the potatoes and cut them into approx. 1 cm thick slices. Place the potato slices in a baking dish and season with salt and pepper.

Pour sauce over potatoes

Pour the sauce from the mixing bowl over the potatoes in the baking dish.

Sprinkle cheese

Sprinkle the grated cheese over the potatoes and the sauce.

Bake

Place the baking dish in the preheated oven and bake for approx. 30 minutes until the potatoes are cooked and the cheese is golden brown.
