Description

This is a classic of Sicilian cuisine that I often prepare for family celebrations. Baked ring-shaped pasta is a rich and flavorful dish, perfect for a Sunday lunch or a dinner with friends. The combination of minced meat, peas, mozzarella and cooked ham makes this dish irresistible. The crunchy crust on the surface is the icing on the cake! It is a dish that can be prepared in advance and baked at the last minute, which makes it ideal when you have guests. Try it, it will win you over!

Ingredients (14 ingredients)

  • 500 g Ring-shaped pasta
  • 700 g Tomato purée
  • 250 g Minced pork
  • 250 g Minced beef
  • 150 g Peas
  • 200 g Mozzarella
  • 150 g Cooked ham
  • 100 g Caciocavallo cheese
  • Breadcrumbs
  • 1 piece Onion
  • 1 bicchiere Red wine
  • Extra virgin olive oil (EVO)
  • Salt
  • Black pepper

Preparation of the sauté

Thermomix® Setting

An onion is placed in the bowl and finely chopped for 3 Sec./level 5. Add a drizzle of extra virgin olive oil and cook for 3 Min./120°C/level 1.

Brown the meat

Add 250g of minced beef and 250g of minced pork to the bowl. Brown for 5 Min./120°C/level 2. Mix well with the spatula.

Deglaze with wine

Thermomix® Setting
2 min/Varoma/Speed 1 Varoma

Add 1 glass of red wine and cook for 2 Min./Varoma/level 1 without the measuring cup to evaporate the alcohol.

Cooking the ragu

Add 700g of tomato purée, 150g of peas, salt and black pepper to taste. Cook for 10 Min./100°C/level 1.

Cooking the pasta

Meanwhile, cook 500g of ring-shaped pasta in a pot with plenty of salted water until al dente. Drain them and pour them into a large bowl.

Season the pasta

Add the ragu prepared in the bowl to the pasta in the bowl. Add 200g of diced mozzarella and 150g of diced cooked ham. Mix well to combine all the ingredients.

Prepare the baking dish

Grease a baking dish with a drizzle of extra virgin olive oil and sprinkle with breadcrumbs.

Bake the ring-shaped pasta

Pour the seasoned pasta into the baking dish, spread it well and level it. Sprinkle with 100g of grated caciocavallo cheese and a handful of breadcrumbs. Pour a drizzle of extra virgin olive oil on the surface. Bake in a static oven preheated to 180°C for about 40 minutes.
