I love sweet potato sticks! They are a great alternative to classic French fries and taste simply delicious. This recipe is super easy and succeeds with the Thermomix® in no time at all. The sweet potatoes are first cut into sticks and then mixed with cornstarch and spices. By soaking them in water beforehand, they become nice and soft on the inside and crispy on the outside. Perfect as a side dish or as a snack in between meals. If you like, you can also serve them with various dips. An absolute must for every sweet potato fan!

Ingredients (5 ingredients)

  • 600 g Sweet potato
  • 2 tbsp Cornstarch
  • 2 tbsp Neutral vegetable oil
  • 0.5 tsp Salt
  • 0.5 tsp Sweet paprika

Preparation (9 steps)

Preheat oven and prepare tray

Preheat the oven to 200 °C convection. Line a baking sheet with baking paper. This step is done without the Thermomix.

Prepare sweet potatoes

Wash the 600 g sweet potatoes and peel them with a vegetable peeler. Then cut the sweet potatoes with a large, sharp knife first lengthwise, then into slices and then into sticks (approx. 1 cm wide / 6 cm long). This step is done without the Thermomix.

Soak sweet potato sticks

Place the sweet potato sticks in a bowl with cold water. They should be covered with water. Leave them here for 30 minutes. This step is done without the Thermomix.

Prepare oil-spice mixture

Mix 2 tablespoons of oil, ½ teaspoon of salt and ½ teaspoon of sweet paprika in a small bowl. This step is done without the Thermomix.

Dry sweet potato sticks

After soaking in water, pour the potato sticks into a sieve and then dry them well with a kitchen towel. This step is done without the Thermomix.

Mix sweet potato sticks with cornstarch

Place the dried sweet potato sticks in a bowl and sprinkle 2 tablespoons of cornstarch over them. Close with a lid and shake well so that the sticks are evenly covered with starch. This step is done without the Thermomix.

Mix sweet potato sticks with oil-spice mixture

Drizzle the oil-spice mixture over the sweet potato sticks and shake again until the sticks are evenly coated. This step is done without the Thermomix.

Bake sweet potato sticks

Spread the potatoes evenly on the baking sheet so that they do not lie on top of each other. Bake in the preheated oven on the middle rack for approx. 25 minutes. Open the oven door every now and then for 5 seconds so that the moisture can escape. This step is done without the Thermomix.

Finish and serve

Fill the finished fries into a bowl and add salt to taste. Serve immediately. This step is done without the Thermomix.

Sweet potato sticks are more than just a side dish for me; they are a small culinary journey. I still remember my first contact with them well. I discovered these orange-colored delicacies in a small, inconspicuous food truck at a food festival. The combination of sweetness and spice, the crispy outside and the soft core - I was immediately thrilled. Since then, I have been experimenting with different recipes to create the perfect sweet potato stick. The sweet potato itself is the star of this dish. Its natural sweetness, which is intensified by baking, forms a wonderful contrast to the savory spices. The cornstarch plays a crucial role in the crispness. It removes moisture from the sticks and ensures a perfect crust. The vegetable oil serves as a carrier for the spices and helps to brown the sticks evenly. Salt and sweet paprika are the basis for the seasoning, but there are no limits to your imagination here. The Thermomix® itself is not used directly in this recipe, but it can help with the preparation. For example, the sweet potatoes can be cut into coarse pieces in the Thermomix® before they are manually brought into the desired shape. It is important that the sticks are approximately the same size so that they cook evenly. Soaking the sticks is a crucial step to remove the starch and make the sticks soft on the inside. The subsequent drying is just as important so that the cornstarch adheres well and the sticks become crispy. For a vegan version, make sure to use a purely vegetable oil. You can vary the spices to your heart's content. Garlic powder, onion powder, smoked paprika powder, chili or curry powder give the sticks their very own touch. If you like it a little hotter, you can also add a pinch of cayenne pepper. Sweet potato sticks are incredibly versatile. They go perfectly with burgers, sandwiches or as a side dish to grilled food. But they are also perfect as a snack in between meals. Dips such as aioli, sour cream, guacamole or a creamy herb curd go well with them. A sweet and sour dip or a mango chutney are also a great addition. The sweet potato sticks taste best fresh from the oven. If there is anything left over, you can store them in the refrigerator. However, they will then lose their crispness. To refresh them again, you can briefly heat them in the oven or in the hot air fryer. You can also prepare the sweet potato sticks by cutting them, soaking them and mixing them with cornstarch. Then, shortly before baking, you can mix them with the oil-spice mixture and put them in the oven. This is a quick and easy way to prepare a delicious snack or side dish.
