Description

This dish is a real treat! The tender beef fillet harmonizes perfectly with the aromatic rosemary potatoes and the fresh raspberry salad. I like to make it when I want to cook something special. The preparation is a bit more complex, but the result is worth it. The salad with raspberries brings a fruity note to the dish, which goes wonderfully with the savory meat. Ideal for a festive occasion or just to treat yourself. The potatoes are nicely crispy in the oven and the rosemary gives them a great aroma.

Ingredients (11 ingredients)

  • 500 g Potatoes
  • 1 Zweig(e) Rosemary
  • 6 tbsp Olive oil
  • Sea salt
  • Pepper (freshly ground)
  • 2 piece Beef fillets (à 200 g)
  • 1 tbsp Butter
  • 2 tbsp White wine vinegar
  • 1 tsp Dijon mustard
  • 50 g Lamb's lettuce
  • 125 g Raspberries

Preparation (6 steps)

Prepare potatoes

Thermomix® Setting
3 sec/Speed 8

Wash 500 g potatoes well and cut into thin wedges. Pluck 1 sprig of rosemary and place the needles in the mixing bowl. Chop for 3 sec/speed 8. Add the chopped rosemary needles to the potato wedges. Add 2 tbsp olive oil, sea salt and pepper (freshly ground) and mix well.

Bake potatoes

Spread the potato wedges on a baking sheet lined with baking paper and bake in a preheated oven at 175 °C circulating air for approx. 30 minutes. Then reduce the temperature to 100 °C.

Prepare beef fillet

Pat 2 beef fillets (à 200 g) dry and tie them into a round shape with kitchen twine.

Sear beef fillet

Heat 2 tbsp oil in a pan and sear the meat sharply on both sides. Reduce the temperature, add 1 tbsp butter to the pan and melt. Fry the meat in the butter for 1-3 minutes on each side, depending on the desired degree of doneness. Remove, season with salt and pepper, wrap in aluminum foil and place in the oven with the potatoes at 100 °C for approx. 10 minutes.

Prepare dressing

Add 2 tbsp white wine vinegar, 1 tsp Dijon mustard, salt and pepper to the mixing bowl and stir for 10 sec/speed 3. Slowly add 2 tbsp olive oil through the lid opening while stirring.

Arrange salad

Wash and shake dry 50 g lamb's lettuce, mix with 125 g raspberries. Remove meat from the oven and season with salt and pepper. Arrange meat, potatoes and salad on plates. Drizzle salad with dressing.
