Description

These punch cookies from the Thermomix® are a delicious dessert with egg yolks, butter, flour and nuts. The preparation with cookie crumbs and apricot jam makes them a special treat during the Christmas season. In 90 minutes, you can create delicious cookies, ideal as finger food for family and friends. The working time is about 45 minutes.

Ingredients (8 ingredients)

  • 1 Stück Egg yolks
  • 50 g Icing sugar
  • 100 g Butter
  • 150 g Flour
  • Cookie crumbs, finely crumbled
  • Grated nuts
  • Apricot jam
  • Some rum to taste

Preparation (8 steps)

Mix ingredients for the dough

Add egg yolks, icing sugar and butter to the mixing bowl and mix for 20 sec/speed 4.

Add flour and process into a dough

Thermomix® Setting

Add flour and process for 2 min/kneading stage to form a dough.

Chill dough

Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.

Preheat oven

Preheat oven to 180°C top/bottom heat.

Prepare filling

Mix cookie crumbs, grated nuts and apricot jam in a bowl. Refine with rum to taste.

Shape and fill cookies

Halve the dough and roll out thinly on a floured work surface. Cut out circles or other shapes. Place a teaspoon of filling on half of the dough pieces. Place the remaining dough pieces on top and press the edges together well.

Bake cookies

Place the filled cookies on a baking sheet lined with baking paper and bake in the preheated oven for approx. 12-15 minutes until golden brown.

Let cool

Let the cookies cool on a wire rack after baking.
