Description

This cauliflower pasta with pumpkin seed pesto is a delightful and healthy dish that's quick to prepare. Roasting the cauliflower brings out its natural sweetness, which pairs perfectly with the nutty and vibrant pesto. I love how easy it is to throw together on a busy weeknight. The lemon zest adds a bright, fresh finish. It's a great way to get your veggies in and enjoy a satisfying meal. Feel free to add some grilled chicken or shrimp for extra protein. This recipe is vegetarian and can easily be made vegan by substituting the hard cheese with a plant-based alternative.

Ingredients (10 ingredients)

  • 400 g cauliflower
  • 75 ml olive oil
  • 180 g pasta
  • 1 piece chopped onion
  • 3 clove garlic cloves
  • 1 pinch chilli flakes
  • 75 g pumpkin seeds
  • 35 g hard cheese
  • 1 bunch soft herbs
  • 0.5 piece lemon

Preparation (5 steps)

Roast the cauliflower

Preheat the oven to 220°C. Toss the 400g cauliflower florets with 2 tbsp olive oil on a baking tray. Season with salt and pepper. Roast on the top shelf of the oven for 25 mins until the florets are slightly charred. While the cauliflower is roasting, cook the 180g pasta according to package instructions. Drain the pasta, reserving a mug of cooking water.

Chop the onion

Add 1 chopped onion to the mixing bowl and chop for 3 Sec./Stufe 5.

Sauté onion, garlic and chilli flakes

3 min/248°F/Speed 1 120

Add 2 tbsp olive oil to the mixing bowl with the chopped onion and sauté for 3 Min./120°C/Stufe 1. Add 3 garlic cloves and a pinch of chilli flakes and cook for 1 Min./120°C/Stufe 1.

Make the pesto

Thermomix® Setting
15 sec/Speed 7

Add 75g pumpkin seeds, 35g hard cheese, 1 garlic clove, small bunch of roughly chopped soft herbs and 75ml olive oil to the mixing bowl. Mix for 15 Sec./Stufe 7. Scrape down the sides of the bowl with a spatula and mix again for 5 Sec./Stufe 7.

Combine and serve

Thermomix® Setting
10 sec/Linkslauf/Speed 2 Reverse

Tip the roasted cauliflower, cooked pasta, pesto and a splash of the reserved pasta water into the mixing bowl with the onion mixture. Mix for 10 Sec./Linkslauf/Stufe 2. Season with salt and pepper and add a splash of lemon juice. Sprinkle over a pinch of lemon zest to serve.
