  • 1 piece carrots
  • 2 piece celery stalks
  • 30 g soy sauce
  • 0.5 bicchiere water
  • 20 g almond flakes

Chop the vegetables

Flour the chicken

In a large bowl, flour 500 g of chicken bites with flour as needed. Make sure they are well coated.

Sauté the vegetables

Pour seed oil as needed into the bowl and add the chopped onion, carrot and celery. Sauté for 3 Min./120°C/Stufe 1.

Add the floured chicken bites to the bowl and brown for 5 Min./120°C/Stufe 1/Linkslauf. Mix gently with the spatula to ensure the chicken browns evenly.

Deglaze with 30 g of soy sauce and add ½ glass of water. Cook for 15 Min./100°C/Stufe 1/Linkslauf.

Despite its simplicity, this dish contains a balance of flavors that makes it always current and appreciated. The version I propose, prepared with the Thermomix®, is a quick and practical way to obtain a perfect result, without sacrificing taste. The key to this dish lies in the quality of the ingredients. The chicken bites, preferably thigh for greater tenderness, must be fresh and cut into uniform sizes to ensure even cooking. The flour, used to flour them, creates a light crust that seals the juices and gives a pleasant consistency. The chopped onion, carrot and celery, the classic base for many Italian dishes, brings sweetness, aroma and a note of freshness. Soy sauce, a fundamental element, gives flavor, umami and an oriental touch. The water, added in small quantities, helps to create a smooth and enveloping sauce. Finally, the almond flakes, lightly toasted, add crunchiness and a delicate flavor that goes perfectly with the chicken. For preparation with the Thermomix®, it is important to follow the order of operations. The chopped vegetables must be fine but not excessive, to prevent them from burning during cooking. The flouring of the chicken must be uniform, but without excess flour. During browning, it is essential to mix gently with the spatula to prevent the bites from sticking to the bottom of the bowl. Cooking at a low temperature and with the counter-clockwise movement (Linkslauf) ensures that the chicken remains tender and juicy. Adding the almonds at the end of cooking allows you to preserve their crunchiness. To vary the dish, you can use tofu bites instead of chicken for a vegetarian or vegan version. In this case, it is advisable to marinate the tofu in soy sauce and grated ginger for at least 30 minutes before cooking it. You can also add other vegetables, such as julienned peppers or sliced mushrooms. For a spicier touch, you can add a pinch of chili powder or a few drops of sriracha sauce. Chicken bites with almonds are served hot, accompanied by basmati rice, which perfectly absorbs the sauce. They can also be served with rice noodles or quinoa. A side of steamed vegetables, such as broccoli or green beans, completes the meal. Chicken bites with almonds can be stored in the refrigerator for a maximum of 2 days, in an airtight container. They can be reheated in a pan or in the microwave. They can be prepared in advance, up to the cooking phase, and stored in the refrigerator. When serving, add the almonds and heat everything up.
