  • 2 tsp light or dark brown sugar
  • 1 tsp ground coriander
  • 1 tsp ground ginger
  • 1 tsp turmeric
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 0.5 cup prepared peanut sauce
  • 0.5 cup light coconut milk
  • 0.5 cup chicken broth
  • 4 piece boneless, skinless chicken breast halves
  • 2 tbsp vegetable oil
  • 2 tbsp coarsely chopped peanuts
  • 2 tbsp thinly sliced scallions

Add 2 teaspoons of light or dark brown sugar, 1 teaspoon of ground coriander, 1 teaspoon of ground ginger, 1 teaspoon of turmeric, 1 teaspoon of salt, 1 teaspoon of garlic powder, and 1 teaspoon of chili powder to the mixing bowl. Mix for 10 Sec./Stufe 4.

Peanut Sauce Mixture

In a separate bowl, combine ½ cup of prepared peanut sauce, ½ cup of light coconut milk, and ½ cup of chicken broth. Mix well and set aside.

Prepare Chicken

Split each of the 4 boneless, skinless chicken breast halves by cutting in half horizontally. Lightly pound to about a 1/2-inch thickness. Place chicken and 2 tablespoons of vegetable oil in a medium bowl; toss to coat. Sprinkle the seasoning mix evenly over the chicken breasts.

Cook Chicken

Heat a 12-inch non-stick skillet over medium-high heat until very hot, then add chicken. Cook, turning once, until crusty brown and fully cooked, about 2 minutes per side. Transfer to a cutting board and let rest.

Reduce Peanut Sauce

Add the peanut mixture to the empty skillet; cook, stirring constantly to loosen brown bits, until sauce reduces by half, about 2 to 4 minutes. Return to measuring cup.

Final Touches

To serve, cut each breast cutlet into 12 to 15 bite-sized pieces. Transfer to a serving platter. Drizzle with a little peanut sauce, then sprinkle with 2 tablespoons of coarsely chopped peanuts and 2 tablespoons of thinly sliced scallions. Serve immediately with toothpicks and remaining dipping sauce.
