Description

Quick and healthy noodle bowl with vegetables and peanut sauce.

Ingredients (14 ingredients)

  • 125 g Whole wheat spaghetti
  • 2 Stück Carrots
  • 1 Stück Zucchini
  • 2 Stück Spring onions
  • 200 g Chickpeas
  • 3 EL Peanuts
  • 60 g Peanut butter
  • 2 EL Soy sauce
  • 1 EL Sesame oil
  • 1 EL Water
  • 1 EL Rice vinegar
  • 2 EL Maple syrup
  • 1 Zehe Garlic
  • 0.5 TL Ginger

Preparation (5 steps)

Chop garlic

Put a clove of garlic in the mixing bowl and chop for 3 sec./speed 7. Scrape down the sides with the spatula.

Prepare dressing

20 sec/Speed 3

Add 60 g peanut butter, 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp water, 1 tbsp rice vinegar, 2 tbsp maple syrup and 1/2 tsp grated ginger to the mixing bowl and mix for 20 sec./speed 3.

Prepare vegetables

Peel carrots. Then cut carrots and zucchini into spaghetti form with a spiral cutter. Cut spring onions into rings. Rinse chickpeas with water.

Cook spaghetti

Cook 125 g whole wheat spaghetti in a separate pot according to package instructions. Then drain and let cool.

Assemble bowl

Fill the spaghetti, chickpeas, vegetable noodles and dressing separately into a bento lunch box. Garnish with 3 tbsp peanuts. Mix everything together before eating and enjoy cold!
