The combination of galangal, coriander, cumin, and anise seed creates a unique and delicious flavor profile. The recipe requires some marinating time, but the result is well worth the wait. These skewers are also great for meal prepping – just marinate the chicken ahead of time and cook it when you're ready to eat.

Ingredients (12 ingredients)

  • 4.5 pound skinless, boneless chicken breasts, cut into 1-inch cubes
  • 2 piece large onions, coarsely chopped
  • 0.25 cup brown sugar
  • 5 clove garlic
  • 1 piece 1-inch piece shrimp paste (belachan)
  • 2 tablespoon galangal powder (lengkuas)
  • 1 tablespoon ground coriander
  • 2 teaspoon ground cumin
  • 2 teaspoon ground anise seed
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground turmeric
  • 60 piece bamboo skewers

Preparation (7 steps)

Prepare the Chicken

Cut 4 ½ pounds of skinless, boneless chicken breasts into 1-inch cubes. Place the chicken cubes in a large bowl and set aside.

Chop Onions

Add 2 large onions, coarsely chopped, to the Thermomix bowl and chop for 3 Sec./Stufe 5.

Make the Spice Paste

Add ¼ cup brown sugar, 5 cloves garlic, 1 1-inch piece shrimp paste (belachan), 2 tablespoons galangal powder (lengkuas), 1 tablespoon ground coriander, 2 teaspoons ground cumin, 2 teaspoons ground anise seed, 1 teaspoon ground black pepper, and 1 teaspoon ground turmeric to the Thermomix bowl. Grind into a smooth paste for 20 Sec./Stufe 8.

Marinate the Chicken

Transfer the spice paste to the bowl with the chicken. Mix well to coat the chicken. Cover the bowl with plastic wrap and marinate in the refrigerator for 24 hours.

Prepare for Broiling

Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line 2 baking sheets with aluminum foil.

Thread Chicken onto Skewers

Thread chicken onto 60 bamboo skewers, leaving enough space to hold skewers. Arrange skewers on baking sheets.

Broil the Skewers

Broil in the preheated oven until top is browned, about 10 minutes. Remove from oven; flip all the skewers over. Return to the oven and broil second side until browned, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
