Description

This carpaccio of black tomatoes with Burrata is a real eye-catcher and tastes simply fantastic! The dark, almost mystical tomatoes harmonize perfectly with the creamy Burrata and the crunchy pomegranate seeds. A touch of light balsamic vinegar and olive oil rounds off the taste experience. I especially like to make this dish in the summer when the tomatoes develop their full flavor. It is super quick to prepare and is ideal as a starter or light lunch. If you like it a little nuttier, you can add a few roasted hazelnuts. An absolute favorite recipe that is always well received by my guests!

Ingredients (9 ingredients)

  • 250 g Mini vine tomatoes black
  • 50 g Pomegranate seeds
  • 1 Handvoll Basil leaves
  • 50 g Pine nuts
  • 2 tbsp Light balsamic vinegar
  • 3 tbsp Native olive oil
  • 1 pinch Salt
  • 1 pinch Pepper
  • 250 g Burrata

Preparation (4 steps)

Roast pine nuts

Roast the pine nuts in a coated pan without fat until golden brown. Then set aside and let cool.

Prepare dressing

Thermomix® Setting

Put 2 tbsp light balsamic vinegar, 3 tbsp olive oil, salt and pepper into the mixing bowl and stir for 10 sec/level 3.

Arrange carpaccio

Arrange the washed and sliced ​​tomatoes on a plate or plates to form a carpaccio. Sprinkle the washed and shaken dry basil leaves, the washed and dried pomegranate seeds and the roasted pine nuts over it. Drizzle the dressing over the tomatoes.

Add burrata and serve

Place the burrata in the middle of the carpaccio and serve immediately.
