Description

This cauliflower macaroni casserole with Parmesan crust is a hearty main course for the whole family, prepared in the Thermomix®. The main ingredients are cauliflower, macaroni, Creme Fraiche, Gruyère and Parmesan. Preparation in the Thermomix® takes about 35 minutes and yields 6 servings. Ideal for lovers of warm cheese cuisine and suitable as a vegetarian dish.

Ingredients (16 ingredients)

  • 1 piece Cauliflower, medium-sized
  • 300 g Macaroni, short
  • 200 ml Pasta water
  • 200 g Creme Fraiche
  • 200 g Gruyère or Emmentaler, freshly grated
  • 50 g Parmesan, fresh, finely grated
  • 300 g Cooked ham, diced
  • 2 tbsp Salt
  • 1 tsp Olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper, freshly ground
  • 1 knife tip Nutmeg, freshly grated
  • 28 piece Salty crackers
  • 4 tbsp Parmesan, fresh, finely grated
  • 60 g Butter, melted
  • 2 tbsp Parsley, freshly chopped

Chop crackers

Thermomix® Setting

Place 28 salty crackers in the mixing bowl and chop for 10 sec/speed 8. If necessary, push down with the spatula and repeat the process until the desired consistency is reached.

Prepare Parmesan cracker mixture

3 min/122°F/Speed 2 50

Put 60 g butter in the mixing bowl and melt for 3 min./50°C/speed 2. Then add 4 tbsp grated Parmesan and the chopped crackers and mix for 10 sec/speed 3. Transfer the mixture and set aside.

Preheat oven and prepare casserole dish

Preheat the oven to 220 degrees top/bottom heat. Grease a large casserole dish (approx. 30x20 cm) with butter and set aside.

Prepare cauliflower

Clean the cauliflower, remove the thick outer leaves and the hard part of the stalk. Then quarter the cauliflower and cut the stalk out of the cauliflower quarters. Divide the florets into bite-sized pieces.

Grate cheese and dice ham

Grate 200 g Gruyère or Emmentaler and 50 g Parmesan fresh and set aside. Dice 300 g cooked ham and set aside.

Cook cauliflower and macaroni

Put 3 liters of water and 2 tbsp of salt in the mixing bowl and bring to the boil for 12 min./100°C/speed 1. Then add the prepared cauliflower and 300 g short macaroni and cook for 8 min./100°C/reverse rotation speed 1. Make sure that the noodles do not stick to the bottom.

Catch pasta water

Towards the end of the cooking time, scoop out 200 ml of pasta water and pour into the prepared casserole dish.

Drain and season cauliflower and macaroni

Drain the cauliflower and macaroni and add to the pasta water in the casserole dish. Season with salt, pepper and freshly grated nutmeg and stir well.

Finish casserole

Stir the grated Gruyère or Emmentaler, the grated Parmesan, 200 g Creme Fraiche and the diced ham into the cauliflower macaroni mixture and season to taste.

Sprinkle on Parmesan cracker crust and bake

Spread the Parmesan cracker mixture evenly over the casserole. Place the casserole in the preheated oven on the second shelf from the bottom and bake for about 8-10 minutes until golden brown.

Garnish and serve

Garnish the finished casserole with 2 tbsp of freshly chopped parsley and serve.
