Description

  • 100 g cooked Ham - diced
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 200 g Cream
  • 200 ml Vegetable broth

  • 150 g grated Gouda

Prepare vegetables

Cut cauliflower and broccoli into florets. Cut the cooked ham into small cubes. These preparation steps are important to optimally prepare the ingredients for further processing.

Pre-cook cauliflower and broccoli

Add 500 ml water and 1 tsp salt to the mixing bowl. Place cauliflower florets in the steamer basket and insert. Close the lid and cook for 5 min./100°C/speed 1. Then add broccoli florets and cook for another 5 min./100°C/speed 1.

Preheat oven

Preheat the oven to 200°C top and bottom heat. This ensures that the casserole is baked evenly.

Prepare roux

Thermomix® Setting
5 min/194°F/Speed 3 90

Put butter in the mixing bowl and melt for 2 min./50°C/speed 2. Add flour and sauté for 2 min./100°C/speed 2. Add cream and vegetable broth and cook for 5 min./90°C/speed 3 until a creamy sauce is formed. Season with salt, pepper and nutmeg.

Layer casserole

Put cauliflower, broccoli and ham in a casserole dish. Pour the prepared sauce over it and mix everything well. Spread the grated cheese evenly over it.

Bake casserole

Bake the casserole in the preheated oven for 20 minutes until the cheese is golden brown.

This Gratinated Cauliflower and Broccoli with Ham is a dish that has tradition in our house. My grandma has always prepared it, but without a Thermomix®. She stood at the stove for hours to conjure up the perfect béchamel sauce. With the Thermomix® this is of course much easier and faster, without the taste suffering. It is a dish that conveys warmth and security, perfect for cold days or simply when you need something hearty. The main protagonists of this casserole are of course cauliflower and broccoli. The cauliflower brings a slightly sweet, almost nutty note, while the broccoli with its slightly tart taste provides a nice contrast. The cooked ham provides a hearty spice and a pleasant saltiness. It rounds off the vegetables perfectly and makes the casserole a complete meal. The butter in the roux gives the sauce a rich, velvety texture and a fine taste. The cream makes the sauce creamy and the vegetable broth provides the necessary liquid and spice. Salt, pepper and nutmeg are the classic spices for a béchamel sauce and should of course not be missing. The grated Gouda provides a golden brown crust and a spicy taste. When pre-cooking the vegetables in the Thermomix®, it is important to adhere exactly to the cooking time. The cauliflower should still have some bite, as it will continue to cook in the oven. The broccoli should not become too soft, otherwise it will fall apart. Make sure that the steamer basket is not too full so that the vegetables can cook evenly. The roux is best when the butter is properly melted before the flour is added. Let the roux sweat while stirring until it is lightly browned. This will prevent the sauce from having a floury taste. When seasoning the sauce, you can be a little more generous, as the vegetables absorb some of the spice. If you like it vegetarian, you can simply leave out the ham or replace it with smoked tofu. For a vegan version, you can use vegetable alternatives instead of cream and Gouda. Instead of Gouda, you can also use Emmentaler or mountain cheese. If you like it a little spicier, you can add some garlic or chili to the sauce. Fresh herbs such as parsley or chives also go perfectly with this casserole. Serve the casserole warm, straight from the oven. A fresh salad or a piece of baguette goes well with it. The casserole is also ideal for taking away, as it can be prepared and reheated well. The Gratinated Cauliflower and Broccoli with Ham can be prepared well. You can prepare the vegetables and the sauce the day before and store them in the refrigerator. The next day you only have to layer everything in the casserole dish, sprinkle with cheese and bake. Leftovers of the casserole can be stored in the refrigerator and consumed within 2-3 days. The best way to reheat is in the oven or microwave.
