Description

This recipe for braised rabbit in Ore Mountain style is a hearty main course, ideal for autumn and winter. The rabbit is first marinated in buttermilk and then braised with vegetables and bacon. The preparation takes about 4 hours and yields 4 servings. A festive dish for special occasions.

  • 4 Stück Onion(s)
  • 8 Stück Garlic clove(s)
  • 2 Wurzel/n Celery
  • 2 Stück Carrot(s)
  • 2 Liter Buttermilk
  • 1.5 Liter White wine, dry
  • 0.5 Liter Meat broth
  • 1 EL Mustard (not sweet)
  • 6 Scheibe/n Bacon (belly bacon)/strongly streaked, thinly sliced
  • 1 EL Sour cream
  • Salt
  • Pepper, freshly ground
  • 3 EL Clarified butter
  • 1 EL Vegetable oil
  • 1 TL Tomato paste
  • 1 EL Cornstarch if needed

Preparation (8 steps)

Prepare rabbit

Cut up the rabbit 2 days in advance. Peel half of the onions, carrots, garlic cloves, and celery. Place the Wundermix WunderSlicer V2 with the coarse disc on the mixing bowl lid. Roughly grate the onions, carrots, and celery into the mixing bowl. Add garlic cloves. Place the ingredients in a large pot and add the rabbit. Cover with buttermilk so that the rabbit is completely covered. Cover the pot and marinate the rabbit in the refrigerator for 2 days.

Rinse and prepare rabbit

After 2 days, remove the rabbit from the marinade and rinse thoroughly. Discard the marinade. Preheat the oven to 200°C circulating air.

Chop vegetables

Peel the remaining onions, carrots, garlic cloves, and celery. Place the Wundermix WunderSlicer V2 with the fine disc on the mixing bowl lid. Finely grate the onions, carrots, and celery into the mixing bowl. Add garlic cloves and chop for 3 sec./level 7.

Sear rabbit

Dry the rabbit thoroughly and rub with salt and pepper. In a separate pan, sear the rabbit pieces one after the other in the hot clarified butter and oil until browned. Remove and keep warm. Wrap the loin pieces with belly bacon so that they do not become so dry in the oven.

Sauté vegetables

Add the tomato paste and the chopped vegetables to the mixing bowl and sauté for 3 min./120°C/level 1 until lightly colored.

Prepare sauce

Deglaze with part of the white wine and scrape the browned bits from the bottom. Add the mustard and then return the rabbit to the mixing bowl. Add the remaining white wine and the meat broth.

Braise rabbit

Place the closed roaster in the hot oven. After 20 minutes, reduce the temperature to 150°C. Let the rabbit braise for about 1 1/2 to 2 hours. Check about 1 to 2 times and turn the rabbit, adding some white wine or meat broth if necessary.

Finish rabbit

Then turn off the oven and let the rabbit cool. Then take the rabbit out and keep warm. Before serving, stir 1 tbsp of sour cream with the Milkix instead of the mixing knife in the mixing bowl at level 3.5 for 30 seconds.
