This hearty potato Brussels sprouts casserole with ground meat is a hearty main course, ideal for the cold season. The combination of potatoes, Brussels sprouts and ground meat, refined with a creamy sauce and cheese, makes this casserole a warming treat. Prepared in the Thermomix® and baked in the oven, it is ready in about an hour and yields 4 servings.

  • 600 g Potatoes
  • 500 g Brussels sprouts
  • 1 piece Onion
  • 400 g Ground beef
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 250 ml Milk
  • 250 ml Vegetable broth
  • 1 tbsp Chopped parsley
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg
  • 100 g Grated cheese

Prepare potatoes and Brussels sprouts

Peel 600 g potatoes and cut into bite-sized pieces. Cut out the stalk from 500 g Brussels sprouts and remove the outer leaves. Quarter 1 onion.

Chop onion

Place the quartered onion in the mixing bowl and chop for 3 sec./level 5. Scrape down from the edge with the spatula.

Pre-cook potatoes and Brussels sprouts

Place the prepared potatoes and Brussels sprouts in the simmering basket. Pour 1 liter water into the mixing bowl, insert the simmering basket and cook for 15 min./100°C/level 1.

Fry ground meat

Heat 2 tbsp butter in a pan and fry 400 g ground beef together with the chopped onion until the meat is crumbly.

Prepare sauce

Dust the fried ground meat with 2 tbsp flour and fry briefly. Then add 250 ml vegetable broth and 250 ml milk and bring to a boil while stirring. Stir in 1 tbsp chopped parsley and season everything with salt, pepper and nutmeg.

Layer casserole

Place the pre-cooked potatoes and Brussels sprouts in a greased casserole dish and mix with the ground meat.

Bake casserole

Sprinkle the casserole with 100 g grated cheese and bake in a preheated oven at 180 degrees top and bottom heat for 30 minutes until the cheese is golden brown.

The Brussels sprouts, often underestimated, bring a slightly bitter note and a certain freshness to the casserole. The ground beef provides the savory component and provides a strong seasoning. The onion, finely chopped, forms the aromatic base for the ground meat and the sauce. The butter and flour serve as the basis for the creamy sauce, the milk and vegetable broth ensure the right consistency and taste. The parsley brings a fresh, green note, while salt, pepper and nutmeg perfectly round off the casserole. The grated cheese, preferably a variety that melts well, such as Gouda or Emmentaler, provides the golden brown crust and the irresistible taste. When preparing in the Thermomix®, it is important not to cook the potatoes and Brussels sprouts for too long, otherwise they will become too soft. The cooking time in the simmering basket should be strictly adhered to. When browning the ground meat in the pan, it is important that the meat is well browned before it is dusted with flour. The sauce should be brought to a boil while stirring constantly to avoid lumps. When layering the casserole, it is important to mix the potatoes, Brussels sprouts and ground meat well so that the flavors combine optimally. For a vegetarian version, the ground meat can be replaced by lentils or tofu. For a vegan version, vegetable alternatives can be used instead of butter and milk.
