Description

This potato vegetable casserole is a real all-rounder and perfect for using up leftover vegetables! I often make it when I still have potatoes and vegetables in the fridge. The preparation is super easy and quick, so ideal for the end of the working day. The sour cream ensures a creamy consistency and the cheese ensures a golden brown crust. If you like, you can also add pasta. A filling and delicious dish that the whole family will enjoy!

Ingredients (8 ingredients)

  • 5 piece Potatoes
  • 1 Stange/n Leek
  • 2 Karotte/n Carrots
  • 1 Zwiebel/n Onion
  • 100 g Diced bacon
  • 1 container Sour cream
  • 2 tsp Vegetable broth instant
  • 100 g Cheese grated

Preparation (7 steps)

Prepare potatoes

Peel 5 potatoes, cut into approx. 1 cm thick slices and set aside in a separate bowl.

Chop vegetables

Thermomix® Setting

Clean 1 stalk of leek, 2 carrots and 1 onion and cut into coarse pieces. Put everything together in the mixing bowl and chop for 5 sec./speed 5.

Add bacon

Add 100 g diced bacon to the chopped vegetables in the mixing bowl and briefly mix with the spatula.

Fill casserole dish

Put the potato slices and the vegetable-bacon mixture in a casserole dish and mix well.

Prepare sauce

Thermomix® Setting
20 sec/Speed 3

Put 1 cup of sour cream and 2 tsp of vegetable broth instant in the mixing bowl and stir for 20 sec./speed 3.

Complete casserole

Pour the sour cream-vegetable broth mixture over the potatoes and vegetables in the casserole dish. Sprinkle 100 g of grated cheese on top.

Bake

Bake the casserole in a preheated oven at approx. 160°C (top/bottom heat) until golden brown.
