Description

These lemon caramelized chicken thighs are a delicious second course that is easy to prepare with the Thermomix®. The tender and juicy meat, wrapped in a sweet and sour lemon caramel, will win everyone over. Perfect for a family dinner or a special lunch, they are prepared in a short time and with simple ingredients. The touch of lemon makes this dish fresh and light, ideal for spring. Accompany them with a fresh salad for a complete and tasty meal. A delicious alternative to the usual roast chicken!

Ingredients (4 ingredients)

  • 4 piece Chicken thighs
  • 100 g Cane sugar
  • 500 ml Vegetable broth
  • 2 piece Lemons

Preparation of vegetable broth

Thermomix® Setting
20 min/212°F/Speed 1 100

Prepare the vegetable broth with the Thermomix. Pour 1 liter of water into the bowl, add the vegetables for broth and cook for 20 Min./100°C/Stufe 1.

Cooking the chicken thighs in the broth

As soon as the broth is ready, insert the chicken thighs into the bowl and cook for 20 Min./100°C/Stufe 1.

Preparation of lemon juice

Cut the lemons in half and squeeze them. Set aside the juice.

Caramelization of sugar

Thermomix® Setting
8 min/248°F/Speed 2 120

Pour the cane sugar into the clean, dry bowl. Caramelize for 8 Min./120°C/Stufe 2.

Dilution of caramel with lemon juice

Thermomix® Setting
3 min/212°F/Speed 2 100

Add the juice of two lemons to the caramel in the bowl. Cook for 3 Min./100°C/Stufe 2.

Cooling the caramel

Transfer the caramel to a bowl and let it cool slightly until it reaches the desired consistency.

Caramelizing the chicken thighs

Drain the chicken thighs from the broth and dip them in the lemon caramel prepared previously.

Baking in the oven

Arrange the caramelized chicken thighs on a baking sheet lined with baking paper and bake at 180°C for another 25 minutes. This step is not performed with the Thermomix.
