Description

I love preparing these lemon chicken strips with arugula! It's a dish that I often make when I don't have much time but I want something tasty and light. The scent of fresh lemon goes perfectly with the delicacy of the chicken, and the arugula adds that touch of spiciness that never hurts. Perfect for a quick lunch or an informal dinner, it's prepared in a flash and always makes a great impression. Try it, you won't regret it!

Ingredients (7 ingredients)

  • Chicken breast
  • Flour
  • Lemon
  • Arugula
  • Extra virgin olive oil
  • Salt
  • Black pepper

Preparation (8 steps)

Preparation of the chicken breast

If using a whole chicken breast, cut it in half and remove the central bone. Clean the two halves from any fat or waste.

Cutting the chicken into strips

Slice the chicken breast thinly enough, making slices. Cut the slices into fairly wide strips and, if too long, divide them into several parts.

Marinating the chicken

Collect the chicken strips in a bowl and add the grated zest of one lemon and the juice of two lemons. Cover the bowl and marinate for 5 minutes.

Flouring the strips

Spread a little flour on a work surface. Take one strip at a time and pass it in the flour, making sure it is completely covered. Place the floured strips on a cutting board or tray without overlapping them.

Cooking the strips

Heat a drizzle of extra virgin olive oil in a pan over medium-high heat. Add the floured strips and brown them well on both sides until golden. Salt to taste.

Adding the marinade

Pour the marinade (juice and lemon zest) into the pan with the strips. Turn up the heat and reduce the marinade, stirring gently, until you get a lemon cream.

Adding the arugula

A couple of minutes before the end of cooking, add the arugula to the pan and let it wilt slightly, stirring gently.

Serve

Serve the lemon chicken strips with arugula while still hot or at room temperature.
