Description

This couscous with seven vegetables and meats is a comforting and flavorful dish, perfect for large gatherings and special occasions. I often prepare it in the autumn and winter, as it warms the heart and soul. The spices Ras el hanout, turmeric and cumin give it an enchanting scent, while the various vegetables provide an incomparable texture and taste richness. The meat, a mixture of lamb and chicken, is tender and juicy. A complete and generous dish that will delight your guests! Feel free to add a touch of harissa to enhance the taste.

Ingredients (20 ingredients)

  • 2 c à s cumin
  • 2 c à s turmeric
  • 2 c à s Ras el hanout
  • 6 clous clove
  • 100 g butter
  • Salt
  • Pepper
  • 7 c à s oil
  • 200 g chickpeas
  • 200 g small peas
  • 5 branches coriander
  • 4 pièces chicken thighs
  • 8 pièces lamb chops
  • 3 pièces carrots
  • 3 pièces turnips
  • 4 pièces onions
  • 2 pièces courgettes
  • 700 g medium couscous
  • 3 c à s harissa
  • 2 louches broth

Preparation of the vegetables

Peel the carrots, turnips, courgettes and onions. Set aside.

Preparation of the meat and onions

Put the onions in the bowl and chop 3 Sec./Stufe 5. Add 3 tbsp of oil and sauté 3 Min./120°C/Stufe 1.

Cooking the meat and spices

In a pan, brown the lamb and chicken separately. Add the browned meats to the bowl with the onions. Cover with water. Add the Ras el hanout, turmeric, cumin, cloves, coriander, salt and pepper. Cook 20 Min./100°C/Stufe 1/Linkslauf.

Addition of vegetables

Cut the carrots and turnips into pieces. Add them to the bowl. Cook 25 Min./100°C/Stufe 1/Linkslauf.

Adding courgettes and canned vegetables

Cut the courgettes into pieces and add them to the bowl. Add the chickpeas and small peas. Cook 5 Min./100°C/Stufe 1/Linkslauf.

Preparation of the couscous

Pour the couscous into a very large saucepan. Sprinkle with salted water. Add 4 tbsp of oil. Let swell for about 10 minutes.

Steaming the couscous

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Put 500 ml of water in the bowl. Put the couscous in the Varoma. Place the Varoma on the bowl and cook 10 Min./Varoma/Stufe 1.

Second steaming of the couscous

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Put the couscous back in the large saucepan. Stir quickly, removing any lumps. Put the couscous back in the Varoma. Place the Varoma on the bowl and cook 10 Min./Varoma/Stufe 1.

Serve the couscous with the vegetables, meat and sauce. Add harissa according to your taste.
