Description

This no-bake coffee flan is a creamy and delicious dessert, perfect for any occasion. The recipe is very simple and does not require an oven, making it ideal for hot days or when you don't want to complicate things in the kitchen. The coffee flavor is intense and perfectly complements the smoothness of the flan. I often prepare it for my friends and family, and it's always a hit! In addition, it can be prepared in advance and stored in the freezer until serving time. A refreshing and easy-to-make dessert, give it a try!

Ingredients (6 ingredients)

  • 500 gramos milk
  • 2 piece eggs
  • 120 gramos sugar
  • 50 gramos coffee essence
  • 9 gramos neutral powdered gelatin
  • 54 gramos water

Hydrate the gelatin

In a small bowl, place 9 g of neutral powdered gelatin and pour 54 g of cold water on top. Stir a little to dissolve the lumps and let it hydrate for at least 10 minutes.

Heat the milk with the coffee

Pour 500 g of milk and 50 g of coffee essence into the Thermomix bowl. Heat for 5 Min./90°C/Stufe 2.

Mix eggs and sugar

In a separate bowl, mix 2 eggs with 120 g of sugar using a whisk until the sugar dissolves.

Incorporate the hot milk into the eggs

Slowly pour the hot milk from the Thermomix over the egg mixture, stirring constantly to prevent the eggs from cooking too quickly.

Pour the mixture into the bowl

Pour the egg and milk mixture back into the Thermomix bowl.

Cook the cream

Cook the mixture in the Thermomix for 8 Min./85°C/Stufe 2, stirring with the spatula if necessary. Be careful not to boil.

Strain the cream

Remove the Thermomix bowl and strain the cream through a fine sieve to remove any possible lumps.

Add the hydrated gelatin

Add the previously hydrated gelatin to the strained cream and mix in the Thermomix for 1 Min./50°C/Stufe 3 until it is completely melted.

Pour into molds and freeze

Pour the mixture into sweet dishes or silicone molds and freeze for at least 6 hours.

Unmold and temper

After the time has elapsed, unmold the coffee flans, place them on plates and let them temper for an hour before serving.

This coffee flan is my modern version, adapted to the convenience of the Thermomix and with a touch of coffee that makes it irresistible. It is a simple but elegant dessert, perfect to end a meal with a sweet and comforting flavor. Milk is the base of this flan, providing creaminess and smoothness. I use whole milk for a richer result, but you can use semi-skimmed milk if you prefer a lighter option. Eggs are essential for the texture, providing the characteristic consistency of the flan. Sugar, in addition to sweetening, helps to lightly caramelize the surface during tempering, creating a delicious contrast. Coffee essence is the star ingredient, providing an intense and aromatic flavor. It is important to use a good quality essence for optimal results. Neutral gelatin is crucial for the flan to set without the need for an oven. For the preparation, it is essential to hydrate the gelatin well to avoid lumps. When heating the milk in the Thermomix, be sure not to exceed the indicated temperature to prevent it from burning. When incorporating the hot milk into the eggs, do it little by little and stirring constantly to prevent them from cooking and forming lumps. If you see that the cream thickens too much during cooking in the Thermomix, you can add a little more milk. Straining the cream is an important step to eliminate any impurities and obtain a smooth and silky texture. When adding the hydrated gelatin, make sure it dissolves completely so that the flan sets evenly. For a vegetarian version, the neutral gelatin can be substituted with agar-agar, a seaweed with gelling properties. For a vegan version, vegetable milk (almond, soy or coconut) can be used and the eggs can be replaced with apple sauce or ripe banana. You can also add spices such as cinnamon, vanilla or cardamom to give the flan a different touch.
