Description
This creamy butternut squash soup from the Thermomix® is quick to prepare with just a few ingredients such as butternut squash, onions and vegetable stock. The recipe is vegetarian, vegan, gluten-free and lactose-free. In just 30 minutes you can create 4 servings of a delicious soup. Ideal as a light appetizer or as a simple main course, especially suitable for autumn.

1 kg Butternut squash

2 Onions

2 EL Butter

800 ml Vegetable stock
-
Salt
-
Pepper
-
Nutmeg
Preparation (7 steps)
Prepare squash
Halve the butternut squash, remove the seeds, peel and roughly dice.
Chop onions
Place onions in the mixing bowl and chop for 3 sec./speed 5.
Sauté onions
Add butter and sauté for 3 min./120°C/speed 1.
Add squash
Add diced squash and sauté for 2 min./120°C/speed 1.
Cook soup
Add vegetable stock and cook for 20 min./100°C/speed 1.
Purée soup
Purée the soup for 1 min./speed 10.
Seasoning
Season with nutmeg, salt and pepper.
