Description

This creamy milk ice cream is an absolute classic and the perfect base for countless ice cream variations! I have been making it for years and it is always well received. The preparation is very simple and with the Thermomix® it is guaranteed to succeed. Whether pure, with fresh fruit or a touch of chocolate – there are no limits to your creativity. Ideal for warm summer days or as the crowning glory of a delicious meal. Try it out and discover your favorite variety!

Ingredients (4 ingredients)

  • 250 ml Milk
  • 250 g Cream
  • 4 piece Egg yolk
  • 90 g Sugar

Preparation (6 steps)

Heat milk and cream

Thermomix® Setting
5 min/194°F/Speed 1 90

Put 250 ml milk and 250 g cream into the mixing bowl and heat for 5 min./90°C/speed 1. Then let it cool down a little.

Mix egg yolks and sugar

Thermomix® Setting
20 sec/Speed 3

Put 4 egg yolks and 90 g sugar into the mixing bowl and mix for 20 sec./speed 3.

Add cream milk and whisk

Thermomix® Setting
8 min/176°F/Speed 2 80

Slowly pour the slightly cooled cream milk into the mixing bowl to the egg yolk-sugar mixture and stir in for 8 min./80°C/speed 2. Make sure that the mixture does not get too hot.

Cool and stir cold

Pour the ice cream mixture into a bowl and let it cool in an ice-cold water bath while stirring for 6 minutes. Then put in the refrigerator for 30 minutes.

Freeze ice cream

Prepare the ice cream maker according to the instructions for use. Pour the ice cream mixture into the ice cream container and let it freeze until creamy and firm. Depending on the type of ice cream, this takes about 45 - 60 minutes.

Portion and store ice cream

Remove the finished ice cream from the ice cream container with a large spoon or spatula and fill it into the containers for storage and freeze.
