Description

These crispy chicken morsels are perfect for a tasty appetizer or as a quick and delicious second course. The double breading makes them irresistible, and the preparation is really simple with the help of the Thermomix®. I love them because they are ready in a flash and everyone always likes them, young and old! You can customize the spices to your liking, adding a pinch of smoked paprika or a mix of aromatic herbs. Serve them hot with your favorite sauce for an even more delicious experience. Ideal for an informal dinner with friends or a festive buffet.

Ingredients (10 ingredients)

  • Chicken breast
  • 100 g Flour
  • 1 tsp Mixed spices
  • 1 tsp Icing sugar
  • to taste Mixed pepper
  • to taste Salt
  • 2 pezzi Egg white
  • 50 ml Whole milk
  • 150 g Breadcrumbs
  • Peanut oil

Preparation (7 steps)

Chicken cubed

Cut the chicken breast into strips and then into cubes of about 1 cm per side. Set aside.

Preparation of the spiced breading

In the Thermomix bowl, insert 100g flour, 1 teaspoon of mixed spices, 1 teaspoon of icing sugar, a pinch of mixed pepper and a pinch of salt. Mix for 10 Sec./Stufe 4.

Flour the chicken

Pour the mixture of flour and spices into a baking dish. Flour the pieces of chicken well, then, using a sieve, remove the excess flour.

Preparation of the batter

In a bowl, lightly beat 2 egg whites with 50ml of whole milk without whipping them.

Double breading

Take a baking dish with 150g of breadcrumbs and start breading the chicken morsels, passing them first in the egg white and then in the breadcrumbs. Repeat the operation to create a double breading to make the popcorn even crispier.

Frying

Heat plenty of peanut oil in a pan. When the oil has reached temperature, start frying the morsels; the popcorn will be cooked when they have taken on a browned color.

Drying and serving

Dry the chicken morsels on absorbent paper, salt lightly and serve the chicken morsels very hot.

Crispy chicken morsels, or "chicken popcorn" as my grandchildren often call them, are a dish that takes me back in time, to the birthday parties of my childhood. They weren't exactly like I prepare them today, with the double breading and exotic spices, but the idea of ​​small pieces of crispy chicken was always present, a symbol of joy and sharing. My version is an evolution of that memory, enriched by the practicality of the Thermomix® and my passion for cooking. The chicken breast, cut into cubes, is the basis of this preparation. Its white and delicate meat lends itself perfectly to being enhanced by the crispy breading. The flour, together with the icing sugar, creates a dry base that allows the spices to adhere evenly to the chicken. The icing sugar, an unexpected touch, helps to slightly caramelize the breading during frying, giving a slightly sweet flavor that balances the savory flavor of the spices. The mixed pepper and mixed spices are the aromatic heart of this dish. You can use your favorite blend, or create a custom one with paprika, curry, garlic powder, and onion powder. The egg white and whole milk create a light batter that allows the breadcrumbs to adhere perfectly to the chicken. The breadcrumbs, finally, are the element that gives the irresistible crispness. The preparation with the Thermomix® is incredibly simple. The food processor allows you to mix the dry ingredients evenly and quickly, creating a perfect breading in seconds. A tip: make sure the bowl is perfectly dry before adding the ingredients, to prevent lumps from forming. For an even crispier breading, you can use panko instead of traditional breadcrumbs. Panko is a type of Japanese breadcrumb that is coarser and lighter, and absorbs less oil during frying. For a vegetarian or vegan version, you can replace the chicken with tofu or seitan morsels. In this case, I recommend marinating the tofu or seitan in soy sauce and grated ginger for at least 30 minutes before breading them, to add flavor. You can also experiment with different spices, such as curry for an exotic touch, or chili for a spicier flavor. Crispy chicken morsels are perfect to serve as an appetizer, accompanied by sauces such as mayonnaise, ketchup, barbecue sauce or sweet and sour sauce. They are also excellent as a second course, accompanied by chips, salad or grilled vegetables. For a more sophisticated touch, you can serve them with a yogurt and mint sauce. If you have any chicken morsels left over, you can store them in the refrigerator for a maximum of 24 hours. To reheat them, I recommend putting them in the oven at 180°C for a few minutes, to make them crispy again. You can also prepare them in advance and freeze them before frying. In this case, I recommend thawing them completely before frying.
