Description

These creamy chicken croquettes are a delicious way to take advantage of any cooked chicken you have left over. The recipe is simple, although it requires a little patience to form the croquettes and fry them. I often make them when I have roast chicken from the day before, and they are always a success! The creamy béchamel with the shredded chicken is a perfect combination, and the crispy breading gives it the final touch. They are ideal as an appetizer for an informal dinner or as a starter for a special meal. Go ahead and try them, you'll love them! You can accompany them with a fresh salad for a more complete dish.

Ingredients (11 ingredients)

  • 3 tbsp cornstarch
  • 0.5 cup water
  • 1 cup tomato sauce
  • salt
  • pepper
  • 2 tbsp oil
  • 1 piece finely chopped onion
  • 3 cup cooked and shredded chicken
  • 0.5 cup breadcrumbs
  • 2 piece beaten egg
  • oil for frying

Preparation (8 steps)

Prepare the tomato and cornstarch sauce

In a bowl, dissolve 3 tablespoons of cornstarch in ½ cup of water. Mix well until there are no lumps. Add 1 cup of tomato sauce, salt and pepper to taste. Mix all the ingredients until a homogeneous mixture is obtained. Reserve.

Sauté the onion

Finely chop 1 onion. Pour 2 tablespoons of oil into the Thermomix glass. Add the chopped onion and sauté for 3 Min./120°C/Stufe 1.

Mix the onion with the sauce

Thermomix® Setting

Pour the mixture of tomato sauce and cornstarch into the Thermomix glass together with the sautéed onion. Program 8 Min./90°C/Stufe 3 so that the sauce thickens, stirring with the spatula if necessary.

Add the chicken and cool

Thermomix® Setting
10 sec/Speed 3/Linkslauf Reverse

Add 3 cups of cooked and shredded chicken to the Thermomix glass. Mix for 10 Sek./Stufe 3/Linkslauf. Pour the mixture into a container and let it cool completely in the refrigerator for at least 2 hours.

Form the croquettes

With a spoon, take portions of the chicken mixture and form the croquettes with your hands. They should be a similar size so that they cook evenly.

Bread the croquettes

Beat 2 eggs in a deep dish. In another dish, place ½ cup of breadcrumbs. Pass each croquette first through the beaten egg and then through the breadcrumbs, making sure they are well covered.

Fry the croquettes

Heat abundant oil in a pan over medium-high heat. Fry the croquettes in batches, without piling them up, until they are golden brown on all sides. Remove the croquettes from the pan and place them on absorbent paper to remove excess oil.

Serve

Serve the hot croquettes as an appetizer or starter. They can be accompanied with a fresh salad or a sauce of your choice.
