I love sweet potato fries! They are a great alternative to classic potato fries and taste simply delicious. This recipe combines the sweetness of the sweet potato with a fresh lime dip that goes perfectly with it. The preparation is super easy and succeeds in the Thermomix® in no time. Ideal as a snack in between, as a side dish for grilling or for a cozy evening with friends. The fries become nice and crispy in the oven and the dip provides an extra portion of freshness. An absolute must for all sweet potato fans!

Ingredients (9 ingredients)

  • 2 piece Sweet potatoes (large)
  • 2 tbsp Starch
  • 2 tbsp Rapeseed oil
  • 0.5 tsp Salt
  • 100 g Mayonnaise
  • 200 g Granular cream cheese
  • 0.5 tsp Dijon mustard
  • 1 piece Organic lime
  • 0.5 piece Chili (red)

Preparation (9 steps)

Prepare sweet potatoes

Peel the sweet potatoes, cut into approx. 1 cm thick strips and place in a bowl with cold water for approx. 1 hour. This helps to remove the starch and the fries will be crispier.

Preheat oven

Preheat the oven to 200 °C circulating air.

Dry and mix sweet potatoes

Remove the sweet potato strips from the water and pat dry well. Place in a bowl, add 2 tbsp of starch and mix well so that all strips are covered with starch.

Season fries

Add 2 tbsp rapeseed oil and 0.5 tsp salt to the mixing bowl and mix for 5 sec/speed 3.

Distribute and drizzle fries

Spread the sweet potato strips on a baking tray lined with baking paper so that they do not overlap. Drizzle the seasoned oil from the mixing bowl over the fries.

Bake fries

Bake the fries in the preheated oven for approx. 10 minutes, turn and bake for another approx. 15 minutes until crispy.

Prepare lime mayo

Add 100 g mayonnaise, 200 g granular cream cheese and 0.5 tsp mustard to the mixing bowl and stir for 10 sec/speed 3.

Add lime and chili

Thermomix® Setting

Wash half of the organic lime, grate the peel and squeeze the juice. Halve the half red chili lengthwise, core and finely dice. Add lime zest, lime juice and chili to the mixing bowl and stir in for 5 sec/speed 3.

Season to taste and serve

Season the lime mayo to taste and serve together with the crispy sweet potato fries.

Sweet potato fries, a trend that has become more and more established in recent years. I still remember well the first time I tried them in a small burger joint in Berlin. The combination of the natural sweetness of the potato and the crispy texture immediately convinced me. Since then, I have been experimenting with different preparation methods and dips. This recipe is the result of these experiments and combines my favorite variations. The sweet potatoes themselves are of course the star of the dish. It is important that they are of good quality. Look for a firm skin and an intense orange color, which indicates a high content of beta-carotene. The starch helps to make the fries nice and crispy. Rapeseed oil is neutral in taste and is well suited for baking in the oven. The salt brings out the sweetness of the potatoes. The lime dip is the icing on the cake. The mayonnaise provides the creaminess, the granular cream cheese for a slight acidity and an interesting texture. The Dijon mustard gives the dip a fine spiciness that harmonizes perfectly with the sweetness of the potatoes. The lime brings freshness and acidity into play, while the chili provides a small kick. When preparing with the Thermomix®, it is important not to cut the sweet potatoes too finely, otherwise they can burn quickly in the oven. The starch ensures that the fries become nice and crispy. Mixing the oil with the salt in the Thermomix® guarantees an even distribution of the taste. When baking, make sure not to place the fries too close to each other on the baking sheet so that they can become crispy from all sides. For a vegan version, you can replace the mayonnaise with a vegan alternative and the granular cream cheese with a vegan cream cheese alternative or cashew cream. Instead of chili, you can also use smoked paprika powder to give the fries a smoky note. Other spices such as curry powder, garlic powder or rosemary also go perfectly with sweet potato fries. Serve the sweet potato fries as a snack in between, as a side dish for grilling or with burgers. They also go well with salads or as part of a tapas plate. A fresh salad with rocket and pomegranate seeds is a great addition. The finished fries taste best fresh from the oven. But you can also store them in the refrigerator and briefly heat them up in the oven or in the hot air fryer the next day. You should store the lime dip in the refrigerator and consume it within 2-3 days. The sweet potatoes can already be peeled and cut the day before. Then keep them in a bowl with cold water in the refrigerator.
