Description

This curd cake with coconut meringue is an absolute classic that I always enjoy baking! The juicy curd cake base harmonizes perfectly with the crispy coconut meringue topping. The lemon juice gives the cake a pleasant freshness. It is ideal for birthdays, coffee parties or just for enjoyment. The preparation is a little more complex, but the result is worth it! A tip: Let the cake cool down well before cutting it, then it will be easier to cut.

Ingredients (16 ingredients)

  • 200 g Flour
  • 65 g Butter
  • 75 g Sugar
  • 1 piece Egg
  • 1 tsp Baking powder
  • 500 ml Milk
  • 1 Pkt. Pudding powder vanilla
  • 150 g Sugar
  • 1 Pkt. Vanilla sugar
  • 3 piece Egg yolk
  • 2 tbsp Sunflower oil
  • 2 tbsp Lemon juice
  • 750 g Low-fat curd
  • 3 piece Egg white
  • 4 tbsp Sugar
  • 100 g Desiccated coconut

Preparation (13 steps)

Prepare shortcrust pastry

Thermomix® Setting
2 min/Kneading speed

Put 200 g flour, 65 g butter, 75 g sugar, 1 egg and 1 tsp baking powder into the mixing bowl and process for 2 min./kneading setting to make a shortcrust pastry. Then wrap the dough in cling film and chill for approx. 15 minutes.

Preheat oven

Preheat the oven to 175°C top/bottom heat (or a little less for fan oven).

Spread dough in mould

Remove the shortcrust pastry from the refrigerator and spread it evenly in a 26 cm springform pan. Pull up a small edge.

Pre-bake the dough

Pre-bake the dough in the springform pan for 10 minutes at 175°C.

Prepare pudding

Thermomix® Setting
10 sec/Speed 4

Put 500 ml milk and 1 packet of pudding powder vanilla into the mixing bowl and stir for 10 sec./speed 4 to avoid lumps. Set the mixture aside to cool.

Prepare curd mixture

Thermomix® Setting
20 sec/Speed 4

Put 150 g sugar, 1 packet vanilla sugar, 3 egg yolks, 2 tbsp sunflower oil and 2 tbsp lemon juice into the mixing bowl and stir for 20 sec./speed 4. Add 750 g low-fat curd and stir in for 10 sec./speed 3.

Stir in pudding milk

Thermomix® Setting
10 sec/Speed 3

Add the prepared pudding milk to the curd mixture in the mixing bowl and stir in for 10 sec./speed 3.

Put the curd mixture on the dough

Take the pre-baked base out of the oven and carefully pour the curd mixture onto it.

Bake cake

Bake the cake for approx. 45 minutes at 175°C.

Prepare meringue

Thermomix® Setting
3 min/Speed 3.5

Put 3 egg whites and 4 tbsp sugar into the mixing bowl. Insert the butterfly and whisk until stiff for 3 min./speed 3.5. Remove the butterfly and carefully fold in 100 g of desiccated coconut with a spatula.

Spread meringue on cake

Remove the cake from the oven after 45 minutes. Carefully spread the coconut meringue mixture on the cake and smooth it out.

Finish baking the cake

Bake the cake again for approx. 15 minutes until the meringue topping is golden brown. Do a chopstick test.

Let the cake cool down

Let the cake cool down well before cutting it.
