Ingredients (8 ingredients)

  • 2 tablespoon vegetable oil
  • 1.5 pounds boneless chicken breast, cut into 1-inch pieces
  • 4 cups water
  • 1 package chicken noodle soup mix
  • 1 piece medium zucchini, halved lengthwise and sliced
  • 2 cups halved grape tomatoes
  • 2 cups baby spinach leaves
  • 1 tablespoon lemon juice

Preparation (6 steps)

Brown the chicken

Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Brown 1 ½ pounds of boneless chicken breast, cut into 1-inch pieces, in 2 batches. Transfer the browned chicken to a plate and set aside.

Combine water and soup mix
