Description

Hearty fried potatoes with scrambled eggs from the Thermomix® are a quick main course with boiled potatoes from the previous day, onions and eggs. The simple recipe is ideal for using leftovers and is ready in 30 minutes. Refined with cream and fresh parsley, it yields 4 servings. Perfect for an uncomplicated meal or as a hearty family dinner.

  • 1000 g Boiled potatoes - from the previous day
  • 1 Stück Onion
  • 50 g Clarified butter
  • 6 Stück Eggs
  • 100 g Cream
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • smooth parsley

Prepare onion

Thermomix® Setting

Peel and halve the onion. Then put the halved onions into the mixing bowl and chop for 3 sec./speed 5. If necessary, use the spatula to push down from the edge.

Sauté onions

Add the clarified butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add potatoes

Thermomix® Setting
5 min/248°F/Linkslauf Speed 1 120 Reverse

Cut the boiled potatoes into approx. 1 cm thick slices and add to the onions in the mixing bowl. Sauté for 5 min./120°C/reverse rotation speed 1 without a measuring cup. The potatoes should not be crushed, but only heated and lightly fried.

Prepare egg mixture

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 90 Reverse

Whisk the eggs and cream in a separate bowl. Season with salt and pepper. Add the egg mixture to the potatoes in the mixing bowl. Let it set for 5 min./90°C/reverse rotation speed 1 without a measuring cup. Make sure that the mixture does not become too dry.

Serve

Remove the fried potatoes with egg from the mixing bowl and serve sprinkled with fresh, chopped parsley.
