Description

These vegan pancakes are a delight for any time of day. The recipe is very simple and quick to prepare, ideal for a special breakfast or a brunch with friends. The base of flour, brown sugar, yeast and vegetable drink (soy or oat) creates a soft and fluffy dough. Personally, I love using oat drink for a sweeter touch and a subtle aroma. In a few minutes you will have golden pancakes ready to enjoy with your favorite syrup and fresh fruit. A vegan option that everyone will love!

Ingredients (6 ingredients)

  • 140 gramos Flour
  • 1 cucharada sopera Brown sugar
  • 2 cucharadas de postre Baking powder
  • 1 pinch Salt
  • 1 cup Soy or Oat drink
  • 2 cucharadas soperas Sunflower oil

Mix dry ingredients

In the Thermomix bowl, add 140 g of flour, 1 tablespoon of brown sugar, 2 dessert spoons of baking powder and 1 pinch of salt. Mix for 5 seconds at speed 4.

Add liquid ingredients

Add 1 cup of soy or oat drink and 2 tablespoons of sunflower oil to the bowl. Mix for 15 seconds at speed 3. Check that there are no lumps and, if necessary, mix for a few more seconds.

Cook the pancakes

Heat a non-stick frying pan over medium heat. Pour portions of batter into the hot pan. Cook each pancake for about 2 minutes per side, or until golden brown.

Serve

Serve the hot pancakes, stacked on a plate. Cover with a kitchen towel to keep them tender. Accompany with agave syrup and fresh fruit.
