Description

This Thermomix® recipe for fine Spritz biscuits is a classic for the Christmas season. The main ingredients are lemon, margarine, sugar, egg yolks and almonds. In about 50 minutes, approx. 60 portions of the delicious biscuits are made. The recipe is easy to prepare and is perfect for festive occasions or cozy winter days. Ideal for anyone who loves traditional Christmas baking.

Ingredients (10 ingredients)

  • 0.5 Stück Lemon
  • 250 g Margarine (room temperature)
  • 325 g Sugar
  • 15 g Vanilla sugar
  • 2 Stück Egg yolks
  • 75 ml Milk
  • 200 g Almonds (ground)
  • 500 g Flour
  • 1 Prise Iodised salt
  • 1 TL Baking powder

Preparation (5 steps)

Grate lemon zest and squeeze juice

Finely grate the zest from half a lemon and squeeze the juice. Set aside the grated lemon zest and measure the lemon juice. No Thermomix setting required.

Mix margarine, sugar and vanilla sugar

Thermomix® Setting
30 sec/Speed 4

Put 250 g of room temperature margarine, 325 g of sugar and 15 g of vanilla sugar into the mixing bowl and mix for 30 sec/speed 4. Use the spatula to scrape down from the edge.

Stir in egg yolks and milk

Thermomix® Setting
20 sec/Speed 3

Add 2 egg yolks and 75 ml milk to the mixing bowl and stir in for 20 sec/speed 3. Add lemon juice and mix for another 10 sec/speed 3.

Mix and stir in dry ingredients

40 sec/Speed 4

Add 200 g ground almonds, 500 g flour, 1 pinch of iodised salt, lemon zest and 1 tsp baking powder to the mixing bowl and stir in for 40 sec/speed 4. Use the spatula to scrape down from the edge and, if necessary, mix for another 10 sec/speed 4 until a homogeneous dough has formed.

Process and bake dough

Remove the dough from the mixing bowl and place in a piping bag. Preheat the oven to 170 °C (convection: 150 °C). Pipe onto baking sheets lined with baking paper. Bake the Spritz biscuits in the preheated oven for 15 to 20 minutes.
