Description

This tricolor chicken meatloaf is a tasty and colorful alternative to the classic meatloaf. I remember my grandmother often prepared it for parties, and every time it was a success! The chicken breast, combined with cooked ham, mortadella and Parmesan cheese, creates a rich and enveloping flavor. The green olives add a touch of freshness. Perfect to serve sliced as an appetizer or main course, accompanied by fresh vegetables or pickles. Preparation takes a little time, but the result is truly delicious and spectacular. Ideal for a Sunday lunch with family or a dinner with friends.

  • Chicken breast
  • Breadcrumbs
  • Cooked ham
  • Mortadella
  • Parmigiano Reggiano
  • Eggs
  • Green olives
  • Salt
  • White pepper
  • Nutmeg

Preparation of the chicken breast

Cut the chicken breast into strips. Set aside.

Chop the ingredients

Insert the cooked ham, mortadella and some pieces of chicken into the bowl. Chop for 5 Sec./level 5.

Knead the mixture

Add the breadcrumbs soaked in milk and squeezed, the grated Parmesan cheese, the eggs, the white pepper, the nutmeg and the salt (if necessary) to the bowl. Knead for 2 Min./level 4.

Layer the meatloaf

Take a sheet of aluminum foil or film and start layering the chopped ham and mortadella and the chicken strips. Place some pitted green olives and, if desired, carrots or pickled gherkins between the layers.

Form the meatloaf

Wrap everything well in the film or foil giving it the shape of a loaf pan.

Wrap and compact

Wrap the loaf in two or three sheets of aluminum foil, tie it with kitchen string and place it in the refrigerator to solidify for about 20 minutes.

Cooking in boiling water

Thermomix® Setting

Bring a pot full of water to a boil. Insert the loaf wrapped in aluminum in the Varoma. Pour 1000 ml of water into the bowl, place the Varoma and cook for 60 Min./Varoma/level 1.

Cooling and resting

Drain the loaf from the water and place it on a plate with a weight on top. When it is completely cold, put it in the refrigerator until the next day when it will be possible to slice and serve it.
