Description

This quince confection is a wonderful way to capture the flavors of autumn. I make it every year when the quinces are ripe. The preparation is a bit time-consuming, but the result is worth it! The slightly sour note of the quinces harmonizes perfectly with the sweetness of the sugar and the warm aroma of the cinnamon. It tastes particularly delicious on fresh bread or as a side dish to cheese. In Portugal, it is traditionally cooked until it is firm to the cut - a real confection!

Ingredients (6 ingredients)

  • 2 kg Quince(s)
  • 1.3 kg Sugar
  • Water
  • 2 Stange/n Cinnamon
  • 0.5 Zitrone(n) Lemon
  • 1 Prise(n) Salt

Preparation (5 steps)

Prepare quinces

Peel, core and cut 2 kg quinces into approx. 2 cm cubes. Cut the peel of half a lemon into fine strips using a lemon zester.

Cook quinces

Thermomix® Setting
20 min/212°F/Speed 1 100

Place the quince cubes together with the lemon zest, 2 cinnamon sticks and 1 pinch of salt in the mixing bowl. Add enough water to cover the quinces. Close the mixing bowl and cook for 20 min./100°C/speed 1 until the quinces are soft.

Puree quinces

Thermomix® Setting
30 sec/Speed 8-10

After cooking, remove the cinnamon sticks. Puree the quinces in the mixing bowl for 30 sec./speed 8-10 until a fine mass is formed. If necessary, use the spatula to push down from the edge and repeat the process.

Cook jam

Thermomix® Setting
30 min/212°F/Speed 2 100

Add 1.3 kg sugar to the pureed quince mixture in the mixing bowl. Close the mixing bowl and cook for 30 min./100°C/speed 2 without a measuring cup. Stir occasionally with the spatula to prevent burning.

Check consistency and let cool

After cooking, do a setting test: Place a small spoonful of the jam on a cold plate. If the jam sets, it is ready. If not, cook for another 5-10 minutes and check again. Pour the finished jam into a baking dish or similar and let it cool completely. It should be firm to the cut.
