Description

This gratinated Belgian endive with bacon is a dish that I often prepare when I want something tasty and comforting. The bitterness of Belgian endive goes perfectly with the flavor of crispy bacon and the creaminess of the gratinated cheese. It is an excellent solution for a quick lunch or a delicious dinner. The preparation is simple and quick, perfect even for those who do not have much experience in the kitchen. The final touch of fresh parsley adds an irresistible aroma. Try it, it will win you over!

  • Belgian endive
  • Bacon
  • Grated cheese
  • Breadcrumbs
  • Milk
  • Parsley
  • Extra virgin olive oil

Preparation of the endive

Divide the endive in half, rinse it under running water to remove any impurities and dry it well. Place the two halves of endive in the steaming basket.

Steaming the endive

Thermomix® Setting

Pour 500 ml of water into the bowl. Insert the basket with the endive and cook for 5 Min./Varoma/Speed 1.

Cooling the endive

After the cooking time, remove the endive from the basket and set it aside to cool.

Preparation of the bacon

Remove the rind from the bacon, if present, and some of the peppering on the surface, then dice it.

Chopping the parsley

Insert a bunch of fresh parsley into the bowl and chop for 3 Sec./Speed 7.

Browning the bacon

In a non-stick pan, brown the diced bacon until crispy. It is not necessary to add fat, as the bacon will release its fat.

Preparation of the filling

Soak the breadcrumbs in milk. When the bread is soft, squeeze it well and transfer it to a bowl. Add the grated cheese, browned bacon and chopped parsley. Mix well to combine all the ingredients.

Stuffing the endive

Transfer the endive to a baking sheet lined with baking paper, with the cut side facing up. Stuff each piece of endive with the prepared mixture and sprinkle with a little grated cheese. Drizzle with a little extra virgin olive oil.

Gratinating in the oven

Bake in a preheated static oven at 200°C for 20-25 minutes. Then, place the oven in grill mode at 210°C and grill the endive until golden brown.
