Description

This shrimp, avocado and apple salad is an explosion of freshness and flavors! The sweetness of the apple blends perfectly with the creaminess of the avocado and the delicacy of the shrimp. A light and nutritious dish, ideal for a summer lunch or a tasty appetizer. The preparation is really simple and quick, perfect even for those who have little time. I love it because it's a healthy and tasty alternative to the usual salads. Try it, you won't regret it! You can also add a touch of arugula for a more decisive flavor.

  • Apples
  • Avocado
  • Oranges
  • to taste Lemon juice
  • Arugula

Preparation of the shrimp

Fill a bowl with water and ice cubes and set aside. Insert 1 liter of water and a bay leaf into the bowl. Bring to a boil for 2 Min./100°C/Stufe 1.

Blanch the shrimp

Add the peeled and deveined shrimp to the bowl and cook for 2 Min./100°C/Stufe 1. Immediately drain the shrimp and immerse them in ice water to stop cooking.

Preparation of the fruit

Peel the apples and avocado, cut them into cubes and put them in a bowl. Peel half an orange and obtain the segments. Add the orange segments to the bowl with the apple and avocado. Season with a pinch of salt and the juice of the remaining half orange. Mix gently.

Combine the shrimp with the fruit

Set aside the most intact shrimp tails for the final decoration. Reduce the remaining shrimp to pieces and incorporate them into the fruit.

Preparation of the vinaigrette

Insert the orange juice, lemon juice, salt and extra virgin olive oil into the bowl. Emulsify for 20 Sek./Stufe 4.

Composition of the cocktail

Compose the cocktail in individual cups, alternating layers of shrimp and fruit salad with a few arugula leaves. Garnish with the shrimp tails set aside and complete by sprinkling everything with the vinaigrette.
