Description

This beetroot salad is a real classic that is easy to prepare and tastes wonderful. The sweetness of the beetroot harmonizes perfectly with the slight sharpness of the onions and the acidity of the vinegar. I like to prepare it a day in advance so that it can infuse properly. I find it particularly tasty with jacket potatoes or as a side dish to grilled food. A great dish for autumn that can be prepared both vegetarian and vegan. The preparation is uncomplicated and the ingredients are easily available.

Ingredients (6 ingredients)

1 kg Beetroot
2 piece Onions
1 tsp Sugar
1 tsp Salt
Vinegar
Oil

Preparation (4 steps)

Prepare beetroot

Put 1 kg beetroot into the mixing bowl and cover with water. Insert the simmering basket and cook for 60 min./100°C/speed 1. Then let the beetroot cool down a little and peel it.

Cut beetroot and onions

Cut the cooled beetroot into thin slices. Also cut 2 onions into thin rings.

Prepare marinade

Put 1 tsp sugar, 1 tsp salt, vinegar as needed and oil as needed into the mixing bowl and stir for 10 sec./speed 3.

Mix the salad and let it infuse

Put the beetroot slices and onion rings in a bowl, pour the marinade over them and mix well. Let the salad infuse in the refrigerator for at least 2 hours, or preferably overnight.
