Description

These gratinated chicken cutlets with mushrooms and mozzarella are a tasty and easy-to-prepare main course, perfect for a family dinner or with friends. The combination of tender chicken, flavorful mushrooms and stringy mozzarella is simply irresistible. I often prepare them when I have little time but still want to bring something special to the table. They can be prepared in advance and baked at the last minute. An extra idea? Add a pinch of chili pepper for a spicy touch!

Ingredients (11 ingredients)

  • Sliced chicken breast
  • Mixed mushrooms
  • 1 clove Garlic
  • Mozzarella
  • Parsley
  • to taste Extra virgin olive oil (EVO)
  • to taste Salt
  • Grated Grana Padano
  • Breadcrumbs
  • Yellow corn flour
  • to taste Salt

Preparation (7 steps)

Cleaning and preparation of mushrooms

Thermomix® Setting

Clean the mixed mushrooms and slice or chop them. Put the mushrooms in the Mixtopf and add a clove of garlic. Chop for 3 Sec./Stage 5.

Cooking the mushrooms

Thermomix® Setting
15 min/212°F/Speed 1 100

Add a drizzle of extra virgin olive oil, a pinch of salt and a little chopped parsley in the Mixtopf. Cook for 15 Min./100°C/Stage 1.

Preparation of the breading

In a dish, mix the grated Grana Padano, breadcrumbs, yellow corn flour and a pinch of salt. Mix well.

Breading the cutlets

Cover the slices of chicken breast with the prepared mix, pressing lightly to make the breading stick well.

Baking in the oven (first part)

Line a baking sheet with parchment paper and brush a drizzle of oil on the paper, arrange the breaded chicken slices on the baking sheet and pour a drizzle of oil also on the surface. Bake the chicken cutlets at 200°C in a static oven for ten minutes.

Filling and second cooking

Take the cutlets out of the oven, cover them with the mushrooms prepared in the Mixtopf and the sliced mozzarella. Put back in the oven and cook for another 10 minutes or so.

Serving

Take the cutlets out of the oven again, add some fresh chopped parsley and serve hot.
