Description

This recipe for stuffed veal cutlets is a hearty main course that is filled with cheese and ham and then breaded. The preparation is done with the help of the Thermomix® for the breading station and then in the air fryer. The dish is ideal for a festive dinner or a hearty lunch. The preparation time is about 45 minutes and yields 2 servings.

Ingredients (9 ingredients)

  • 2 Stück Veal cutlet
  • 2 Scheiben Cheese
  • 2 Scheiben Cooked ham
  • 1 Stück Egg
  • 3 EL Flour
  • 60 g Breadcrumbs
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 EL Rapeseed oil

Preparation (8 steps)

Prepare cutlets

Place the veal cutlets between two layers of cling film and gently flatten to a thickness of approx. 0.5 cm with a meat tenderizer or a pan. This is to make the cutlets more tender and to absorb the filling better.

Prepare filling and fill cutlets

Fold the cheese slices into small pieces and wrap each in a slice of cooked ham. Place the ham and cheese packets on the flattened cutlets. Fold in the sides of the cutlets so that the filling is enclosed. Season the stuffed cutlets with salt and pepper.

Prepare flour

Thermomix® Setting
5 sec/Speed 8

Put 3 tablespoons of flour into the mixing bowl and chop for 5 sec./speed 8 to make sure there are no lumps. Then transfer the flour to a shallow bowl.

Prepare breadcrumbs

Thermomix® Setting
3 sec/Speed 5

Put 60 g of breadcrumbs into the mixing bowl and chop for 3 sec./speed 5 to ensure a uniform consistency. Then transfer the breadcrumbs to a shallow bowl.

Whisk egg

Thermomix® Setting
10 sec/Speed 4

Put 1 egg in the mixing bowl and whisk for 10 sec./speed 4. Then transfer the whisked egg to a deep plate.

Prepare breading station

Place the bowls with flour, whisked egg and breadcrumbs next to each other to form a breading station.

Bread Cordon Bleus

First turn the stuffed meat packets in the flour so that they are completely covered. Then pull through the whisked egg and then turn in the breadcrumbs until they are breaded all around.

Bake Cordon Bleus

Place the breaded Cordon Bleus in the frying basket of the air fryer and brush lightly with rapeseed oil. Bake at 200 degrees for 12-15 minutes until golden brown and cooked through.
