Description

This olive and basil gazpacho is a refreshing and flavorful version of the classic Andalusian gazpacho. The combination of juicy tomatoes, Gordal olives and the aromatic touch of basil make it a perfect dish for hot summer days. It is very easy to prepare with the Thermomix® and can be ready in no time. Ideal as a light starter or as a cold soup to enjoy at any time. A vegetarian dish that is sure to surprise your guests! It is recommended to let it cool well so that the flavors mix.

Ingredients (6 ingredients)

  • 750 g Plum tomato
  • 100 g Seasoned Gordal olives
  • 100 g Cucumber
  • 10 g Basil
  • Sherry vinegar
  • to taste Salt

Preparation of the ingredients

Cut the tomatoes into large pieces (without peeling or deseeding). Peel the cucumber and cut it into pieces. Place the tomatoes, cucumber, olives and basil in the Thermomix bowl.

Chop the ingredients

Add a generous splash of Sherry vinegar and a little salt to the Thermomix bowl. Chop for 2 Min./Stufe 10.

Strain the mixture

Pass the mixture through a strainer or food mill to remove the seeds and skins. This will give a finer texture to the gazpacho.

Adjust the flavor

Correct the salt and vinegar until it is to your liking. Mix well.

Cool and serve

Serve the gazpacho cold, with a little chopped fresh basil and an olive cut transversely as a decoration.
