Description

This fried rice with chicken and vegetables, prepared in the Thermomix®, is a quick and lactose-free main course in the rice or pasta salad category. Jasmine rice, chicken breast fillet, carrots and peppers form the basis for this Asian-inspired dish. In 45 minutes, including 30 minutes of work, a meal for 4 people is created. Ideal for light cuisine or as a family meal.

Ingredients (13 ingredients)

  • 250 g Jasmine rice
  • 300 g Chicken breast fillet
  • 2 Carrots
  • 1 red bell pepper
  • 1 red Onion
  • 50 g Peas (frozen)
  • 2 Garlic cloves
  • 2 EL Sesame oil
  • 4 Eggs
  • Salt
  • Pepper
  • 6 EL Soy sauce
  • 3 EL brown Sugar

Preparation (10 steps)

Prepare rice

Prepare the rice according to the package instructions. Alternatively, 500 g of cooked rice from the previous day can be used.

Prepare vegetables

Peel the carrots and cut into thin strips. Cut the peppers into strips. Cut the chicken breast fillet into strips.

Chop onion and garlic

Put 1 red onion in the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7. Use the spatula to push everything down from the edge.

Sauté onion and garlic

Add 2 tbsp sesame oil to the mixing bowl and sauté for 3 min./120°C/speed 1.

Fry chicken

Fry the chicken breast fillet vigorously on all sides in a large pan with a little oil, season with salt and pepper, then remove and set aside.

Sauté vegetables

Add carrots and peppers to the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare sauce and add rice

Mix 6 tbsp soy sauce and 3 tbsp brown sugar in a bowl. Add the cooked rice, peas and sauce to the mixing bowl and stir in for 3 min./100°C/reverse rotation speed 1.

Mix in chicken

Add the fried chicken to the mixing bowl and mix in for 1 min./100°C/reverse rotation speed 1.

Fry fried eggs

Heat some oil in another pan and add salt. Then fry 4 fried eggs over medium heat.

Serve

Arrange the fried rice on plates and serve with fried eggs.
